Apples in a cake! Two of our favourite things; this is easy and tasty!

Ingredients:
1/2 cup (125 mL) butter, at room temperature
2/3 cup (150 mL) brown sugar
1/2 tsp (2 mL) pure vanilla extract
1 large egg
1 cup (250 mL) all-purpose flour
1/2 tsp (2 mL) baking powder
1/2 tsp (2 mL) baking soda
1 1/2 tsp (7 mL) cinnamon
1/4 tsp (1 mL) salt
1/2 cup (125 mL) buttermilk
2 large apples
1 Tbsp (15 mL) turbinado sugar

Method:
Preheat oven to 400ºF (200ºC)
Grease a 9" cast iron skillet with butter.
Cream together butter and brown sugar, until light and fluffy.
Add the egg and vanilla then continue to beat until smooth.
In another bowl, whisk together the flour, baking powder, baking soda, cinnamon, and salt.
With the mixer on low speed, alternate adding the flour mixture and the buttermilk.
Mix until just combined.
Transfer batter into prepared pan and smooth the top.
Cut apples into thin slices and arrange them on top of the batter.
Sprinkle with turbinado sugar.
Bake for 25 - 30 minutes, or until a cake tester comes out clean.
Serve warm right from the pan.
