Kesari plays an important role in our menu. Every occasion is not complete without a spoon of this delicacy. Rava Kesari that is made out of wheat is more nutritious than sooji/semolina. And it will be much tastier when you use jaggery. Wheat Rava is more filling and comforting. Rava Kesari/Wheat Rava Halva can be offered to God as nivedyam.
Ingredients:
Wheat Rava / Broken Wheat Rava – 1 cup
Water –2 cups
Sugar – 1 1/2 cup
Cardamom Powder – 1/4 tsp
Ghee – 2 tbsp
Cashew nuts – 1 tbsp
Raisins- 1 tbsp
Method:
1. In a pan add Broken Wheat Rawa. Slowly fry the cracked wheat till light brown and nice aroma comes. Remove and keep on the side.
2. Now put 2 cups of water in the pan and bring it to a boil. Then reduce the heat and add the cracked wheat and mix and cook until the cracked wheat is completely done.
3. It takes at least 12 minutes to cook on low-medium heat. Now add the sugar and combine till the sugar is melted. At this point, the halwa looks little wet.
4. In the same pan add a tsp of ghee and fry the cashews and raisins till light brown and remove it.
5. Add the cardamom powder, fried cashews and raisins and the 2 tsp of ghee. Combine till everything is nicely incorporated. Cook for another five to ten minutes till the moisture goes away and the halwa comes together.
Serve it warm.
