Learn how to make Kathiyawadi Vaghareli Khichdi at home with our Chef Ruchi

Kathiyawadi Vaghareli Khichdi is a delicious and wholesome dish from the Kathiyawad region of Gujarat, India. It's a variation of the traditional khichdi, which is a mix of rice and lentils cooked together.
We have made Kathiyawadi Vaghareli Khichdi EXTRAORDINARY using MAGGI Masala-Ae-Magic, which is a blend of roasted spices like green cardamom, clove and aniseed which makes the dish aromatic, giving it an authentic flavour.


Ingredients:
¼ cup Split Green Gram
¼ cup Pigeon Peas
¼ cup Split Green Moong
¾ cup Basmati Rice (washed)
1 Potato (peeled & chopped)
½ cup Green Peas
1 Carrot (chopped)
½ tsp Turmeric Powder
½ tsp Salt
1 tsp Ghee
2½ cups Water
MAGGI Masala Ae Magic
1½ tbsp Oil
1 tsp Mustard Seeds
1 tsp Cumin Seeds
1 inch Cinnamon
3 Cloves
1 Bay Leaf
2 Dried Red Chillies
½ tsp Asafoetida
8-10 Curry Leaves
1 Onion (chopped)
4 Green Chillies (chopped)
1 tbsp Ginger Garlic Paste
1 Tomato (chopped)
Water (as required)
MAGGI Masala Ae Magic
2 tbsp Ghee
2 Dried Red Chillies
Coriander Leaves (chopped)
Chilli Oil (for garnish)

00:00Hello everyone, today I'll be cooking my personal favourite.
00:03You'll ask why?
00:05Well first, my family, especially my husband, loves this dish.
00:10Secondly, I love it because I can prepare it very quickly.
00:14Presenting straight from the heart of Gujarat,
00:17Kathiawadi Baghareli Khichdi.
00:19And today, this recipe is going to be amazing.
00:22So let's get started.
00:24Let's start with rinsing some Dal's.
00:26For this Khichdi, I'm going to be using 3 different kinds of Dal's.
00:30I have here, 1 4th cup of Yellow Moong Dal.
00:341 4th cup of Toor Dal.
00:37And 1 4th cup of Green Moong Dal.
00:41Rinse all these Dal's at least 2-3 times.
00:52I have here, 3 4th cup of Rice.
00:56I've taken Basmati Rice, you can take any Rice of your choice.
00:59And I've also washed it 3 times.
01:02And now, I'm going to add the Dal's and the Rice in a pressure cooker.
01:07Into this, I'm also going to add in some Veggies.
01:10I have here, 1 Potato, chopped.
01:121 cup of Green Peas.
01:141 Carrot, chopped.
01:161 tsp of Turmeric Powder.
01:181 tsp of Salt.
01:201 tsp Ghee.
01:22Add in 2 1⁄2 cups of Water.
01:27Give it a good mix.
01:34Turn on the flame.
01:36Khichdi is comfort food for everyone.
01:39And everyone has their own style of making it.
01:42And today, I'm going to be making it in my style by adding Maggi Masala-E-Magic.
01:47And that is going to make it even more flavourful.
01:50Let's move this pressure cooker on this flame.
01:54Turn on the flame.
01:56And cook this for 4 whistles on high flame.
02:00Let's quickly make the masala for this.
02:06Add in 1 1⁄2 tbsp of Oil.
02:09Add in 1 tsp of Mustard Seeds.
02:121 tsp of Cumin Seeds.
02:161 piece Cinnamon and 3 Cloves.
02:191 Bay Leaf.
02:212 Dry Red Chillies.
02:231⁄2 tsp of Hing or Asafoetida.
02:29A few Curry Leaves.
02:311 Onion, finely chopped.
02:33Saute the Onions till they are nice and soft.
02:394 whistles are up, turn off the flame and let the pressure cooker cool down.
02:44Once the Onions are nice and soft, add in 4 Green Chillies, finely chopped.
02:491 tbsp of Ginger-Garlic Paste.
02:511 Tomato, finely chopped.
02:53Saute everything till the Tomatoes are nice and soft.
02:56All these ingredients are sauteed, and now let's open the pressure cooker.
03:06The Rice and the Dals, as well as the vegetables are nicely cooked.
03:10Time to add them in.
03:17Add in more water to make the Khichdi soft.
03:22Give this a good mix.
03:30Cover and let this simmer for at least a good 7-8 minutes.
03:35Our Khichdi is almost ready, and time to add the final touches with Maggi Masala-E-Magic.
03:42So whenever I cook Dal, Sabzis or even Khichdi,
03:45I make sure to add Maggi Masala-E-Magic and that elevates the flavours perfectly.
03:52That's because it's made with 10 different spices, roasted and blended to perfection.
03:57Maggi Masala-E-Magic adds an extra-ordinary taste to your everyday recipes.
04:12Always remember to add this in your Dals or Sabzis 2-3 minutes before turning off the flame.
04:27Give this a mix.
04:33Cover this and let this cook for 2 minutes.
04:42And now I'm just going to give it a simple Ghee Tadka,
04:45for which I'm going to heat up 2 tbsp of Ghee.
04:49Once the Ghee is slightly hot, add in 2 Dry Red Chillies, let them temper.
04:55Add in a handful of Coriander Leaves.
04:59Turn off the flame.
05:02And pour this Tadka over the Khichdi.
05:05Our Kathiawadi Vaghareli Khichdi is ready.
05:09And the kitchen is full of aroma and I can't wait to taste.
05:20Wow! This is just perfect.
05:23I'm going to be serving it with some Achaar or Papad.
