Learn how to make रस्सा भुर्जी / Anda Bhurji Curry at home with Chef Sonali on Ruchkar Mejwani.

Ingredients:
For Scrambled Eggs
4 Eggs
Salt
1 tsp Oil
For Curry
2 tbsp Oil
2 Onions (chopped)
1 tsp Ginger – Garlic Paste
2 Tomato (puree)
1 Green Chilli (chopped)
1 tsp Cumin Seeds Powder
1 tbsp Coriander Seeds Powder
1 tsp Garam Masala
½ tsp Turmeric Powder
1 tsp Red Chilli Powder
½ tsp Meat Masala
2 cups Water
Salt

Method: Let’s start with making Scrambled Eggs first for which add Eggs in the bowl with Salt, whisk it properly. Next, heat up the Oil in the Pan then add Eggs and scramble the eggs nicely (as shown in the video), now take it out in the plate. Now, let’s make the Curry for again heat up the Oil in the Pan then add Onions sauté it properly, once the Onion is cooked then add Ginger – Garlic Paste. Sauté it again for 2 minutes and add Tomato (puree), cook it for few moments then add Green Chilli (chopped), Cumin Seeds Powder, Coriander Seeds Powder, Garam Masala, Turmeric Powder, Red Chilli Powder, Meat Masala. Next, mix it all together then add Water and mix it again. Now, let it boil and add Salt, then add the Scrambled Eggs and let it boil for 2 minutes. Next, your Rassa Bhurji is ready to serve.
