Couscous Salad To Go – Portable & Yummy

You'll Need:

- 1/2 cup cooked couscous
- 1/4 cup pomegranate seeds
- 2 spring onions
- 1 slice orange cut into pieces
- 1/2 cup corn salad
- 3 tbsp roasted cashew nuts
- mint leaves

For the dressing:

- 6 tbsp olive oil
- half a lemon
- 2 tsp honey
- 1.5 tsp mustard
- salt and pepper

Container:

- 1 preserve jar

Here's How:

1. First prepare the dressing by mixing the olive oil, honey, mustard and a squeeze of lemon juice. Add some salt and pepper.

2. Now fill the jar. First make a layer of couscous and pour the dressing on top of it. Then add the various layers: pomegranate seeds, spring onions, orange pieces, corn salad, cashew nuts and top it all off with some mint leaves.

3. Your salad is ready to go. You can take it to work for a healthy lunch or on a picnic for a refreshing snack. Before serving, turn the jar upside down to cover it with dressing and then stir it a bit with your fork.
