00:00 Assalam o alaikum, hi everyone, welcome to Rizwanah's Cooking.
00:17 Today I am going to make Beef Paya.
00:21 So lets see the ingredients we need and then we will start cooking.
00:27 Take 1 big beef paya, about 2.5 kg.
00:32 Wash it well and clean it.
00:35 If you don't get good clean paya then you have to knead the dough well and then wash it.
00:42 That way it will be clean and you won't see any hair.
00:46 So here we have washed paya.
00:50 Add 2 tbsp ginger garlic paste.
00:53 2 small onions, I have cut them in slices.
00:56 2 black cardamom, 2 bay leaves, 1 tsp turmeric, 1 tsp salt.
01:06 Put the paya in a big vessel.
01:10 Add 5 glasses of water.
01:13 Add garlic, onions, black cardamom, bay leaves, turmeric and salt.
01:22 Mix it well.
01:27 Cover the pan and cook on high heat.
01:30 Cook until water starts boiling.
01:32 Then reduce the flame to medium low.
01:36 Cook for 3-4 hours until the paya is cooked.
01:40 If you want to use pressure cooker then you can use it.
01:45 It cooks very fast.
01:47 Keep stirring and checking it while cooking.
01:52 If you see that the water level is low then add water.
01:56 Paya is cooked well.
01:59 See, the meat is separating from the bones.
02:05 Now it is cooked well.
02:07 Let's start cooking.
02:09 Now we will make the masala.
02:11 For the masala we need onions.
02:15 I have cut 3 small onions in slices.
02:20 1/2 cup oil.
02:22 We have already added salt.
02:24 We will taste it and add salt if needed.
02:30 2 tbsp ginger garlic paste.
02:33 1 1/2 tbsp paprika.
02:35 1 1/2 tbsp red chilli powder.
02:38 2 tbsp coriander powder.
02:41 1 tsp garam masala.
02:44 2 cinnamon sticks and 2 black cardamom.
02:52 Let's make the masala.
02:54 Heat the pan and add oil.
02:58 Add onions.
03:02 Fry the onions until they are brown.
03:10 Add ginger garlic paste.
03:16 Fry it for few seconds.
03:20 It will give a nice aroma.
03:24 Add red chilli powder.
03:30 Add coriander powder.
03:32 Add paprika.
03:34 Fry it for few seconds.
03:36 Add boiled rice.
03:46 Mix it.
03:48 Check salt and red chilli.
03:52 Adjust it if needed.
03:56 Add 1/2 tsp salt.
03:58 Cover it.
04:02 Cook it on medium low heat for 20 minutes.
04:08 It is ready.
04:10 Turn off the flame.
04:12 Serve it hot.
04:14 Garnish it with ginger, green chillies, coriander and lemon.
04:24 Garnish it with garam masala.
04:26 Serve it hot with naan or roti.
