00:26 In this episode of everyday special you are going to see a very popular Gujarati fast
00:31 food, potato puri or potato fritters.
00:36 This is an original recipe of potato fritters so let's start cooking this unique and very
00:42 quick and easy Gujarati dish.
00:46 For this you will need 150 grams besan or gram flour, one potato, oil for deep frying,
00:54 pinch of baking soda, half teaspoon asafoetida, salt and for the serving you will need date
01:02 chutney or khajoor ki chutney.
01:06 Put the besan into the mixing bowl and then add the asafoetida, salt and baking soda.
01:18 Mix this and add water as per requirement, don't add too much water initially otherwise
01:27 it will become thin, the batter should be thick and consistent.
01:34 So this is it, our lovely batter is ready, now I am going to make the chips from the
01:48 potato, press the potato little so chips can be thick, I believe that thick chips make
01:56 the perfect fritters.
02:10 Take one chip and put it into the batter and remove the excess batter.
02:25 Never put the fritters into the very hot oil when you fry it for first time.
02:50 I am going to take this out and I will fry it again after resting it for 10 to 15 minutes.
