00:34 Chilli fritters is a very popular Gujarati snack dish..
00:38 In Gujarat this is known as pati..
00:41 Pati means nothing but chilli slice..
00:44 So let's start cooking this very special Gujarati dish..
00:47 For this you will need 150 grams besan or gram flour..
00:52 Oil for deep frying..
00:54 6 green chillies..
00:56 1/2 teaspoon asafoetida..
00:58 Pinch of baking soda..
01:00 Salt to taste..
01:02 And for the serving you will need date chutney..
01:06 First of all put the gram flour or besan into the mixing bowl..
01:10 Then add asafoetida, salt and baking soda..
01:16 Mix this and add water as per requirement..
01:25 Don't make it too much thin..
01:27 It should be thick enough to cover the chillies very well..
01:32 Thick batter is good for any kind of fritter because it makes the fritter crispy and golden brown very easily..

01:45 Now I am going to cut the chillies lengthwise..
01:52 I don't want to remove the seeds of chillies..
01:56 Because we traditionally cook this recipe with seeds..
01:59 And also don't remove the stems..

02:22 Our chillies are ready for deep frying..
02:25 Now oil is hot enough for deep frying..
02:28 Take the one chillies and give it a nice coating..
02:34 Your chillies should be well covered..
02:36 Otherwise it will become oily..
02:40 Many people don't know how to cook good fritters..
02:45 If you want to cook the perfect fritters then always double fry it..
02:52 As I am also going to do the same thing in this recipe..
02:57 Now it is half cooked..
02:59 So I am going to take this out and give it a rest for 10-15 minutes..
03:06 Or you can also fry it just before serving..
03:27 Remember that whenever you fry second time add the fritters into the very hot oil..
03:33 You have to stir this every now and then so it can become nice golden brown and crispy from every side..
