00:16 Today we're doing bacon burger dogs on the grill,
00:19 and they're real easy to do.
00:21 Alright, here we've got some ground beef.
00:24 This is 80% ground beef, and we've got some hot dogs.
00:29 These are natural casing hot dogs.
00:31 You can use packaged hot dogs if you want,
00:34 but try to get natural casing.
00:36 And here we've got some thin cut,
00:38 American-style pork belly bacon.
00:41 Yeah, this is real good eating right here.
00:43 Alright, now let's put some of these together.
00:47 Now you wanna choose a ground beef
00:49 that's at least 80% lean, maybe 85% lean.
00:53 You have to have good fat content in there
00:55 to make these dogs work.
00:57 And here I've got some seasoning.
00:58 A little bit of salt, pepper, garlic,
01:01 maybe some red pepper flake.
01:03 You choose what your favorite seasoning is for your burgers.
01:06 And then you mix it up real good,
01:08 and then you flatten it out.
01:11 You wanna get it real thin,
01:13 maybe an eighth inch thick, quarter inch.
01:16 And we're doing this here so it'll be a real thin layer
01:21 as we wrap this hot dog in there.
01:24 Alright.
01:25 Spin it.

01:30 And then you trim it.
01:36 Just like that, real easy.
01:40 And then work it with your hands a little bit,
01:41 and you'll find this 80% ground beef
01:45 will adhere to this hot dog real well.
01:48 Now I'm gonna wrap it with this
01:49 thin cut pork belly bacon here.
01:52 And it's gonna be on a slight diagonal.

01:58 Just like that.
02:05 Like I said, real easy to do.
02:07 And work it with your hands a little bit,
02:10 and you're gonna have that bacon adhere real easy
02:12 to that burger dog.
02:14 Alright, now I'm gonna do a couple more here
02:17 so you can get a good idea how this works.
02:20 Again, favorite seasoning, mix it up well.

02:27 And then flatten it out real thin.
02:30 Now it's best when working with these burgers here,
02:35 you wanna have it slightly chilled,
02:37 and you'll find you'll be able to roll it up
02:39 a little bit easier.

02:44 Now I'm gonna trim this ground beef
02:46 till it fits on this hot dog just right.
02:50 You want about an inch of hot dog
02:52 on each side sticking out.
02:55 Again, roll it,
02:56 trim it.

03:01 Grab some more of that thin cut bacon.

05:58 Got about a half dozen here to go on the grill.

06:10 We're gonna put 'em opposite the hot coals, indirect.
06:14 This grill's gonna be about 350, 400 degrees Fahrenheit.
06:18 You don't wanna put 'em directly over the flames.
06:22 You wanna do 'em indirect.
06:23 This way the bacon is gonna tighten up real good
06:27 on these bacon burger dogs.
06:29 And it's gonna take about a half hour,
06:32 maybe 40 minutes,
06:33 depending how hot your coals are.
06:36 Alright, we're about halfway through,
06:39 maybe about 20 minutes.
06:42 Take a look at that.
06:44 This is where you wanna rotate 'em.
06:49 This way we get some even cooking going on.
06:57 That bacon's starting to crisp up.
06:59 Oh yeah.

07:22 Neighbors get wind of this,
07:23 they're gonna be jumping that fence.

07:30 Maybe another 20 minutes to go.

07:43 But what I like to do is make bacon cheeseburger dogs.
07:47 You grab some of your favorite cheddar cheese
07:52 or whatever cheese you like.
08:01 Oh, you getting hungry or what?

08:06 Put the cover on the grill.
08:13 It'll only take a few minutes for this cheese to melt.
08:17 Alright, through the miracle of time,
08:23 these bacon burger dogs are done.
08:26 Take a look at that.

08:32 It's time to pull a couple of these off the grill.
