Learn how to make at home with our Chef Ruchi Bharani

Ingredients:
1½ cups Bottle Gourd (chopped)
Salt (as per taste)
1 tsp Coriander & Cumin Seeds Powder
½ tsp Turmeric Powder
½ tsp Red Chilli Powder
2 tbsp Sugar
1½ tbsp Curd
1½ tbsp Ginger-Chilli Paste
Coriander Leaves (chopped)
½ tsp Garlic Paste
1 Lemon Juice
1½ tbsp Oil
1½ cups Sorghum/Jowar flour
2 tbsp Gram Flour
Water (as required)
A pinch of Baking Soda
Oil
Water (for boiling)
Oil (for shallow frying)
1 tsp Mustard Seeds
1½ tbsp Sesame Seeds
Coriander Leaves (for garnish)

00:00 We are always looking for snack options.
00:02 And Muthia is a very well known and the most common Gujarati snack.
00:06 But today, I am going to be showing you a gluten free version of it.
00:09 And let's begin with the recipe for Jawar Muthias.
00:12 So before I start the process for making the Muthias,
00:16 I have to boil the water in the steamer.
00:19 So let's turn on the flame.
00:20 So in a bowl, I have taken about 1 1/2 cups of finely chopped
00:26 Doodhi or Lauki or bottle gourd, whatever you want to call it.
00:30 I have just used a chopper and just finely chopped it.
00:33 Make sure that you do not grate the Doodhi
00:35 because it's going to ooze out a lot of water
00:37 and I don't want that to happen.
00:38 So use finely chopped Doodhi or Lauki.
00:41 Now into this, I am going to add in a few ingredients.
00:44 So first add in the salt because I want it to ooze out some water.
00:48 Let's add in the seasoning ingredients.
00:50 Coriander and cumin seed powder, 1 tsp.
00:54 Turmeric powder, 1/2 a tsp.
00:56 Red chilli powder, 1/2 a tsp.
00:59 2 tbsp of sugar.
01:02 Gujaratis like to add some amount of sugar in their food.
01:05 So obviously in the Muthias, some sugar goes in as well.
01:08 Next let's add in 1 1/2 tbsp of curd.
01:11 1 1/2 tbsp of ginger chilli paste.
01:14 Coriander leaves, 1/2 a tsp of grated garlic or garlic paste.
01:20 This is optional, so if you don't want to add, you can just skip it.
01:23 Next squeeze in juice of 1 lemon.
01:26 Give all these ingredients a good mix.
01:30 Let this mixture rest for 2 minutes.
01:34 I want the natural water of the Doodhi or bottle gourd to ooze out
01:37 which will help us to bind the Muthias.
01:40 2 minutes are up and now let's add in 1 1/2 tbsp of oil.
01:45 Next I am going to add in some sorghum flour or jawar flour.
01:49 As you all know jawar flour is extremely rich in fibre and vitamin B.
01:54 So this is a very good option.
01:56 So let's add 1 1/2 cups of this flour.
01:59 One very important tip, make sure that you sieve the jawar flour
02:03 with the finest sieve that you have.
02:05 With the jawar flour you can even use bajra and ragi flour.
02:09 Instead of bottle gourd you can use grated cabbage, grated carrots
02:13 or even finely chopped methi or fenugreek leaves.
02:16 2 tbsp of besan or gram flour.
02:19 Let's mix all these ingredients together.
02:21 This has to be a soft mixture.
02:24 If you feel the water from the bottle gourd and the curd is not enough for binding
02:29 you can sprinkle a little bit of water.
02:31 A nice soft dough is ready.
02:37 Just before shaping the Muthias, add a pinch of soda bicarb.
02:42 And now grease your palms.
02:49 I have a perforated steamer tray over here that I have already greased.
02:54 Shape the Muthias into oblong lobs
03:02 and place it on the greased tray.
03:06 Make sure you keep some gaps between the Muthias
03:13 because they tend to spread a little bit
03:15 and the steamer tray will not be able to hold it.
03:18 And the steamer water is nice and boiling.
03:20 Let's place the tray in the steamer.
03:22 Cover it and let this steam for about 20-25 minutes on high flame.
03:28 25 minutes are up, let's check on them.
03:31 Take a knife and poke it in the center.
03:35 If it comes out clean or just slightly moist that means they are done.
03:40 Normally they would take about 25-30 minutes to be done.
03:44 This has come out quite moist, so I will keep it for another 5 minutes.
03:49 Time's up, let's turn off the flame.
03:54 Get the tray out.
03:56 Let the Muthias cool down completely before we chop them up and do the Tadka.
04:03 These logs have completely cooled down, let's slice them up.
04:07 Cut them into 1/4th inch slices, not too thick.
04:13 I am going to saute one log, so let's do the Tadka.
04:16 In a pan, heat up Oil.
04:18 Once the Oil is nice and hot, into this add in Mustard Seeds.
04:22 So around a teaspoon of Mustard Seeds.
04:25 1 1/2 tbsp of Sesame Seeds.
04:28 Just fry them for a few seconds and add in the Muthias slices.
04:32 Spread them in the pan and let them cook on low heat for a couple of minutes.
04:39 Flip them over, once you see a slight colour change, that means they are done on one side.
04:45 Cook them on the other side.
04:47 These seem to be done.
04:52 Let's get them out.
04:54 Garnish with a little bit of Coriander Leaves.
05:01 And this bowl of Gluten-free Jowar Muthias is ready.
