00:01 And I'm Ben, and we're from Tara Distillery here in the beautiful and picturesque Nowra Hill in the Shoalhaven.
00:06 Tara Distillery is a boutique craft distillery.
00:11 We do everything by hand. We make gin and whiskey.
00:15 What I love about the Shoalhaven is it's nice and rural, but you also have the great shopping in Nowra.
00:21 I think Nowra is changing and it's getting lots of nice boutique shops and cafes and nice restaurants now.
00:27 It's a really exciting time in the Shoalhaven. There's these great bars and restaurants that are opening up all around the place.
00:32 And they've been really keen to promote the fabulous produce and products being made in the Shoalhaven by a lot of small boutique artisans and makers like us.
00:40 We're trying to create a product that really captures the essence of where we are in this beautiful part of the world.
00:46 For us, it's really important with our gins that we're using ingredients that we can source locally.
00:51 We've got wonderful, fresh sea lettuce that we actually sustainably harvest nearby.
00:56 I love it when I'm giving people a tasting of our gin and they open the bottle and they go, "Oh my God, that smells like great gin."
01:05 And then they taste it and they go, "That is great gin." And I just love that. It makes me feel so proud.
