Holiday Baking Recipes with a Kick at Pop’s Coffee

With the onset of December, comes holiday baking season! Pop’s Coffee Founder Kimberly Guimarin has created homemade recipes that are not only easy, they all feature a very special ingredient Pop’s Coffee! Stay caffeinated and enjoy some sweet treats this holiday with the following recipes:

Mocha Cutout Cookies
Give gingerbread cookies a run for their money this holiday season!
Ingredients:
1. ½ c. Pop’s Coffee
2. 1 c. shortening, melted
3. ½ c. baking cocoa
4. 1 c. molasses
5. 2 large eggs, room temperature
6. 4 c. all-purpose baking flour
7. 2 tsp. baking soda
8. 1 tsp. ground cinnamon
9. ½ tsp. salt
10. ½ tsp. ground cloves
11. Confectioner’s sugar for sprinkling

Directions:
1. Preheat oven to 350 degrees.
2. Beat together shortening and cocoa until blended. Then beat in molasses, sugar, eggs and Pop’s Coffee
3. Sift together flour, baking soda, cinnamon, salt and cloves.
4. Combine sifted mixture into molasses mixture to form a soft dough. Divide dough in half and shape two discs.
5. Wrap each disc in plastic wrap and chill in refrigerator for one hour.
6. Roll out chilled dough to ¼-inch thickness. Cut into shapes with a 3-inch cookie cutter. Place 2 inches apart on an ungreased baking sheet.
7. Bake at 350 degrees for 14 to 16 minutes.
8. Allow to cool then dust with confectioner’s sugar.
9. Enjoy!
 

Ultra-Easy Coffee Brownies
With just a few ingredients and steps, these delectable brownies can be whipped up in no time!
Ingredients:
1. 1 c. Pop’s Coffee Brazilian Dark, brewed
2. 1 box brownie mix
Directions:
1. Prepare the brownie mix according to package directions, replacing the water with brewed Pop’s Coffee.
2. Bake according to package directions.
3. Enjoy!

Chocolate-Peppermint Drops
Drop one of these little gems into a fresh cup of coffee for a seasonal sip like no other!
Ingredients:
30 unwrapped peppermint discs, plus more for crushing
2 c. milk chocolate chips
½ c. heavy cream
Crushed peppermint discs

Directions:
1. Heat heavy cream in microwave, but do not allow it to come to a boil.
2. Place chocolate chips in large bowl. Pour heated heavy cream over chocolate chips and stir until chocolate is melted and creamy.
3. Dip each mint into chocolate with a candy fork. Allow chocolate to drip back into bowl.
4. Place mint on parchment-lined baking sheet and sprinkle with crushed peppermint discs.
5. Let dry, then place in an air-tight container.
6. To enjoy, gently slip a chocolate-peppermint drop in a hot cup of coffee.

00:23 Oh my goodness, yes.
00:25 It's named after my dad.
00:27 My kids call him Pop or Poppuccino.
00:29 We call it Pops Coffee because he's my biggest cheerleader in life.
00:33 Well, Mama is too, but I've been a daddy's girl forever.
00:37 I love it.
00:38 I am too.
00:39 And that's so sweet.
00:40 That's lovely that you named it after him.
00:41 And I assume he loves a good cup of coffee.
00:42 He loves coffee.
00:44 Black, so everything has to be so good that you can drink it straight.
00:48 I love that.

00:58 But what we're talking about today, and this is something I was saying earlier that I love
01:01 to do, is having a little sweet treat with your coffee.
01:06 And now is the time.
01:07 I mean, this says it all.
01:09 Christmas, the calories don't count, right Kim?
01:12 That's right.
01:13 We don't care about them this time of year.
01:14 Okay.
01:15 So let's talk about some of these amazing recipes that you have for us.
01:19 Sounds great.
01:20 Well, they're all super easy too because this time of year you want something that's fun,
01:23 something that's festive, tastes good, but is quick.
01:26 You don't have all day.
01:28 So if you're in a pinch, somebody's coming over quick, or you just want to take something
01:31 with you somewhere, here you go.
01:32 It is that time of year because there are so many holiday parties, there's so much going
01:36 on.
01:37 So yeah, so start with what we have here on the table.
01:39 Okay.
01:40 We have over here, first we have the mocha brownies, which is super simple using a brownie
01:44 mix from a box.
01:45 Okay.
01:46 So, and it has some, everything has espresso in it today.
01:49 So it gives you a little boost and gives you that depth of chocolate and mocha, right feeling.
01:54 That's amazing.
01:55 I love that.
01:56 It's great.
01:57 And then right here, it's a shortbread cookie.
01:59 You can make your own or you can buy them and it's dipped in a mocha glaze.
02:02 Yum.
02:03 And then we have another one of the mocha brownies dipped in the mocha glaze with some
02:08 peppermint just made it look like a little Christmas tree.
02:09 Oh my gosh.
02:10 That's kind of like...
02:11 And a little candy cane in the bottom and it just looks prettier.
02:14 Looks like a tree that's perfect to have out if you're having a party.
02:18 That's beautiful.
02:19 And that sounds like that has a kick of caffeine.
02:20 A little caffeine with the chocolate and the espresso.
02:24 And then what are these guys here?
02:25 These are little chocolate peppermint drops.
02:27 Super simple.
02:28 You unwrap the peppermints, you dip them in a chocolate glaze.
02:33 Okay.
02:34 Let that dry with some sprinkles on it.
02:36 You get your cup of coffee.
02:37 Okay.
02:38 So I have my cup of coffee here.
02:39 You drop one or two in there and now you have a peppermint mocha.
02:43 Oh my gosh.
02:44 Who needs Starbucks?
02:45 I'm going to do two because why not?
02:47 Who needs Starbucks?
02:48 Because they don't count.
02:49 You can, there you go.
02:50 You can make your own peppermint mocha.
02:51 Look at that.
02:52 All right.
02:53 I'm going to let this melt and then I'm going to drink this later.
02:54 Okay.
02:55 You brought the brownie mix for us to teach us how to make the brownie bites.
02:58 Is that correct?
02:59 Yes.

03:01 All right.
03:02 Let's walk through it.
03:03 So, so easy.
03:04 So you just have a mixing bowl.
03:05 And everything has to be Christmas themed.
03:06 If you are cooking at home for Christmas, you have to have all of your baking stuff
03:09 Christmas themed.
03:10 It just makes it more fun, right?
03:11 It does.
03:12 When you're in the kitchen.
03:13 Put your Christmas music on and it's great.
03:14 So it's just super easy.
03:15 One box of brownie mix.
03:17 Okay.
03:18 Great.
03:19 Easy, easy.
03:20 One cup of brewed espresso that's chilled.
03:22 Okay.
03:23 So that's brewed espresso.
03:24 Great.
03:25 One cup of that.
03:27 And then two eggs.
03:29 Two eggs.
03:30 Nice and easy.
03:31 All right.
03:32 So, Kim, does the espresso change the consistency at all?
03:36 It does.
03:37 It comes out a little more cake like.
03:39 Oh.
03:40 So the consistency and I think it, I don't like to use the word chewy, but it has that
03:44 chewier and a softer texture.
03:46 You don't get the crunchy.
03:47 But you know what?
03:48 That's better.
03:49 But sometimes it's nice to have something different.
03:51 And then you just mix these together.
03:53 Okay.
03:54 Super simple.
03:55 And then you pour it in your pan.
03:56 Put it in the oven about 20, 25 minutes depending on your oven.
03:59 That is so easy.
04:00 And they're ready to go.
04:01 Oh my gosh.
04:02 And you can just enjoy whenever you want because it's just that easy.
04:06 And the glaze is so simple for them if you want to put that on them.
04:09 Tell us about the glaze.
04:10 It's just powdered sugar, cocoa, and espresso.
04:15 So it's a cup of powdered sugar, two tablespoons of cocoa powder, and two tablespoons of brewed
04:21 espresso.
04:22 So this is all stuff too that you probably have at home.
04:24 Exactly.
04:25 You don't have to make a big shopping trip.
04:27 This is so great.
04:28 All right, Kim.
04:29 So pour this in here for us.
04:30 And I don't know if you're like me.
04:31 You always have leftover coffee.
04:32 Oh my gosh.
04:33 So now you have something fun to do with it.
04:35 Could I do this with regular coffee rather than espresso?
04:37 I think you could do it with anything.
04:38 I always have leftover coffee at the end of the day because I make a giant pot for just
04:42 me.
04:43 So this is absolutely perfect.
