Ingredients:
½ cup Onion (chopped)
¼ cup Cashews
4 Green Cardamoms
½ tsp Cumin Seeds
1 tbsp Ginger-Garlic Paste
1 tsp Garam Masala Powder
2 tbsp Oil
½ cup Green Peas
10-12 Mushrooms (cut into half)
1 cup Fenugreek Leaves (chopped)
Water (as required)
¼ cup Fresh Cream
Salt (as per taste)
Fresh Cream (for garnish)
Chilli Oil (for garnish)

00:00 Well, today's recipe is one of those most amazing recipes,
00:03 That you actually see in a restaurant menu.
00:05 But sometimes we kind of get intimidated to replicate this in our home kitchens.
00:09 This one is Malai, Matar, Mushroom.
00:13 Any other I'm left? Methi.
00:15 So Methi, Mushroom, Matar, Malai.
00:17 Let's begin.
00:18 Let's first make a paste with raw Onions.
00:21 To this, I'm going to add in Cashew Nuts.
00:24 Whole Green Chillies.
00:26 3-4 of them because of course we want this to be spicy as well.
00:30 A couple of Green Cardamoms.
00:32 Cumin Seeds.
00:33 Paste of Ginger and Garlic.
00:37 And finally to this, Powdered Garam Masala.
00:39 Let's grind this into a fine and smooth paste.
00:42 Let's turn the flame on.
00:47 And add in some Oil.
00:49 Of course, you can also begin with Ghee or Butter.
00:52 I prefer Oil.
00:53 Let's add in the ground Spice Paste.
00:55 While the Oil is still just about warm.
00:58 Do not add this in hot Oil, otherwise this will splutter all over the kitchen.
01:02 Let's stir this well.
01:06 Lower the flame.
01:09 And allow this to cook for around 8-10 minutes.
01:12 Intermittently of course, you can also keep stirring.
01:20 Ensuring that this does not burn at the sides and the bottom of the pan.
01:24 All we need to ensure is that the Onions and the other ingredients...
01:28 ...are cooked perfectly without any raw flavour, taste or aroma.
01:33 If you see at this stage, it's released its wonderful Green Chilli Oil.
01:40 Let's add in our vegetables and other ingredients.
01:43 Let's begin with Garden Peas.
01:46 Fresh frozen, choice is completely yours.
01:49 Mushrooms.
01:50 Halved or quartered depending on the size.
01:54 And finally, fresh Fenugreek Leaves.
01:57 Again by all means, you could use Kasuri Methi.
02:00 If that's the only option.
02:01 Time to add in a cup full of water.
02:09 To ensure that all of this starts cooking well.
02:12 And of course it also adjusts the consistency.
02:15 Now because this recipe has Cashew Nuts.
02:19 You may want to add in a little more of the water.
02:22 Because by the time this cooks, it'll be perfect.
02:24 To this, to add in to that extra creaminess.
02:28 I'm adding in Cream.
02:29 Salt, right towards the end.
02:32 Depending on how much actually is really needed.
02:35 One quick stir.
02:36 And allow this to cook on medium to low flame.
02:39 After adding in all the ingredients.
02:44 All we do is bring all of this together.
02:46 Mix this nicely.
02:48 Cover this and keep it on medium flame for at least 12 minutes.
02:52 For everything to cook perfectly and become almost a mixture.
02:58 That's tasty. Imagine all the M's coming together.

03:04 Maybe a Malabari Paratha.
