Parabij is one of those simple and delicious dishes that reminds us of our childhood. When our mom didn’t know what to make for lunch, she would go to the garden, pick some eggplants and tomatoes, fry them, and then add a couple of eggs.
This combination, along with steamed rice and cucumber yogurt, oh, what a delicious meal it would make!
