00:00It's no secret that there's a wide variety of foods on offer for attendees at the AgQuip Field Days in Gunnedah.
00:07From spuds on a stick, to lamb chops, to the classic and fresh steak sandwich.
00:16There's a plethora of options for people to enjoy.
00:20But perhaps the most peculiar nibble you can nab at AgQuip is right here at the Fat Wag behind me, where they're selling Wagyu ice cream.
00:28Alright Dave, so tell us a bit about how the idea for the Wagyu ice cream came about.
00:33So we're a paddock-to-plate Wagyu business, and we process all our Wagyu down to the smaller cuts.
00:39And one of our biggest byproducts is the Wagyu tallow.
00:43So for us it was finding ways to be able to utilize this to the best of our abilities.
00:49And we've heard about people with pig fat in ice cream, so we thought why not Wagyu tallow.
00:54We experimented, it took us a little bit of experimenting to get to the final product.
00:58But yeah, we've now been able to produce something that tastes really good.
01:02What's the response been from your customers?
01:04So far we've had no complaints, and we're getting 9 out of 10, 10 out of 10, some even saying 11 out of 10 for the ice cream.
