Aired (August 25, 2024): To give back to the community of Sapang Camachile in Bulacan, Chef JR Royol prepares a Crab Sotanghon for them.

00:00We are now here in Sapang, Camachile, in Paombong, Bulacan.
00:06Aside from their well-known product, which is Sukang Sasa,
00:11this is also one of the richest places.
00:15This is the place of fresh water, fresh fish,
00:20and this is their new harvest, or new catch, Alimango.
00:25So that we can taste a simple dish here in Sapang, Camachile,
00:31I will be cooking Crab Sotanghon.
00:39Our onions are now ready. I'll do that first.
00:42We will now add water.
01:00We will now add water to our sautéed ingredients.
01:04Before we add the other ingredients,
01:10this will serve as our flavor enhancer for our Crab Sotanghon.
01:17We're just going to add in 2 tablespoons.
01:24And now, we can now add our Alimango.
01:34So at this point, I'm now removing the Alimango.
01:51It's now cooked.
01:53So essentially, this dish is a one-pan dish.
01:59And then, we will now add our Sotanghon.
02:13We will now prepare our Kincai.
02:16I will first use the stem.
02:29And of course, to enhance the flavor of our noodles,
02:33we will now add our sautéed garlic and onion earlier.
02:47We will now add our fish sauce and some pepper.
02:59We will now return our crabs and toss them together with the noodles.
