00:00 As a part of the Alkacid family's collaboration, I thought of preparing a boodle fight using the farm-to-table ingredients of Villa Rufina.
00:11 Let's start with the centerpiece of our dish.
00:16 So this is our fabricated tupa.
00:27 Basically, we'll prepare it in our strong grill.
00:32 Typically, if you'll notice, the skin is gone.
00:38 Because of the long cooking time of the skin of the tupa, we opted to remove it.
00:45 And then, we'll do a different preparation for it.
00:50 Basically, what we want to do here is to butterfly it so that it can get a bigger surface area and more parts to cook at the same time.
00:59 We're still here at Villa Rufina Farm Resort and I'm starting to prepare what I'll be serving in our boodle fight.
01:10 Lechong Tupa!
01:16 Now that I've butterflyed our tupa, I'll salt the inside and outside of it.
01:21 After that, we'll peel and chop the garlic.
01:39 We'll also chop the crushed garlic and the lemon grass on the other side.
02:05 Once the tupa is all set, we can now start to boil the water.
02:10 And once the water is hot enough, we can now start to cook the tupa.
02:30 We'll just put some leaves around it so that the heat can't escape.
02:36 In a way, it's like we're making an oven.
02:40 To help the heat spread evenly, we'll put some iron.
