Ingredients :
1 tbsp Oil
4-5 Dried Red Chillies
6-8 Taro Roots (Arbi) (Boiled with Salt & Carom Seeds)
3/4 Cup Tamarind (Soaked in 2-3 cups water)
2-3 Green Chillies (Chopped)
1 Onion (Finely chopped)
2 tbsp Coriander Leaves (Finely chopped)
1/2 tsp Cumin Seeds Powder
1/4 tsp Turmeric Powder
Salt (As Per Taste)

00:00Well, today's recipe is a hot classic from the heartland of Andhra Pradesh and Telangana.
00:06The name of the recipe, Pulusu.
00:08It's a classic Pachi Pulusu with Arbi.
00:12Let's begin.
00:20Well, if you continue watching this recipe carefully,
00:22you'll realise that it's very similar to a Rasam.
00:25The only difference here is that this is in its raw form.
00:29Well, there's no cooking except one ingredient which I can see here,
00:32which is, of course, dried Red Chillies which need to be toasted and crushed.
00:37That is very important.
00:38And of course, this needs to be crisp and brown but not burnt.
00:42Let's see how.
00:43Snip the stalks off, if any, like so.
00:46And tear this up, roughly.
00:48This entire process needs to be done on slow flame,
00:51so that the chillies gently start turning brown.
00:57Let's carefully pull this out.
00:59Let's keep this aside and allow this to cool down completely.
01:04Let's move on to our hero ingredient and in this case, that is Arbi.
01:08Boil this under a couple of whistles along with Carom Seeds and Salt.
01:12We peel this well and that's where we are.
01:16You can fry this at this stage, you can leave it just like so,
01:20or even mash this and the choice is completely yours.
01:24Well, I prefer dicing it like so.
01:27Let's add in Tamarind Juice.
01:30Now, this is basically handful of Tamarind,
01:32which has been soaked in a couple of cups of water.
01:36Let's take in all of this extract.
01:39Now, basically, Pulsu can be made in several ways.
01:42You can make it, of course, with Dal and call it a Parappu Pulusu.
01:47And similarly, there are various core ingredients.
01:50This one is the Rasam-like Pulusu.
01:52I'll buy it in its raw form.
01:54Let's add in our chopped ingredients.
01:56Chillies, followed by finely chopped Onions and Coriander.
02:04Basically, this recipe is the magic of a lot of fresh ingredients coming in together
02:09and creating a dish.
02:12Let's add in some more of the flavour profile, Cumin Powder, a touch of Turmeric,
02:20Salt, and a little bit of Cumin Seeds.
02:25Fried Red Chillies, which would be crushed.
02:31What I like to do sometimes is,
02:33take a little bit of Onions and the Chillies and the Turmeric and add it into this.
02:39Well, that way, this also kind of becomes wonderfully flavourful.
02:44Well, imagine serving this itself as a nice chutney on the side.
02:48But for now, let's add this into the Pulsu recipe.
02:54Let's stir this well.
02:57And with this, your Arbi Pulusu is done and ready.
