00:00Yeah, so about a year and a half ago we looked at this space and Nick and I really fell in love with it, the sandstone and all the natural features through it.
00:09Just talked to us and said, you know, it was just a bistro when we looked at it first off.
00:16So, we've sort of taken out more than we've put in almost.
00:20We've taken all the render off the walls and exposed 100 year old brick and removed the sort of faux ceiling that was in there
00:26and exposed all the natural cedar beams that were through there or the original ones.
00:30And the big point and the big focal point is our wood fire grill.
00:35So, Sean from Newey Fab worked with me on making it.
00:39Sort of a design taken from a couple of different grills that I've worked with in the past.
00:44And yeah, it gives us the flexibility to cook anything from a scallop to a whole pig, which is pretty exciting.
00:52And yeah, it's all focused around the flavours of France.
