00:00Hi, I'm Jordan and I'm Caitlin and we're here at Smoke and Mirrors Restaurant and we're coming up
00:05to our first year of trading so it's been amazing. We've met so many amazing guests
00:11and we've been able to produce loads of fantastic dishes, local produce etc.
00:20So tell me how the last year has really been?
00:24Well, last year has been an absolute whirlwind but we've laughed every second. We've overcome
00:29so much and ultimately it's learning. We've been learning about the demographic, learning about
00:35the guests, getting to know each and every one of you is an absolute pleasure.
00:40Tell me why the refurb?
00:42So we've taken our first year as learning, learning what Portsmouth is like, what they
00:46want us to deliver and we've taken January to implement those changes and we've listened to
00:51everything and we've had a nice refurb. It's been a real learning curve and we've got a fresh new
00:58look to start the year.
01:00Tell me a little bit what the reaction has been like?
01:03It's been amazing, it really has. I mean, people don't know what they're going to get
01:08until they're here and we change the menu every other week which also keeps people on their toes
01:16and it gives someone a different option. Me being the only chef in the kitchen
01:23is a big selling point for us really, isn't it? Because we have ultimate freedom
01:29and we can offer that to our diners.
01:32Tell me what plans are for the future?
01:35Well, we're going to push and refine and push as much as we can. There's going to be a lot of
01:44change, come food, come service, come everything but we are ultimately going to just bring a real
01:53fine dining atmosphere back to Portsmouth and fly the flag and we're back open from the 31st
01:58of January so get booked and we'll see you there soon.
