Parda Chicken Biryani is a unique and flavorful dish where biryani is sealed with a layer of dough (parda) and then baked to enhance the aroma and taste. The sealed cover helps trap all the flavors, making the biryani extra delicious!😊
🔷Here's a recipe to make it:-
☛FOR MARINATION:-
* Take Chicken - 600 grams in a bowl.
* Add 1 tsp Salt.
* 2 tsp Ginger garlic paste.
* ½ Lemon juice.
* 2 tbsp Kashmiri red chilli powder.
* 1 tbsp Coriander powder.
* 1 tsp Cumin powder.
* ½ tsp Turmeric powder.
* 1 tsp Garam masala.
* 1 chopped tomatoes.
* ½ bowl chopped coriander leaves.
* ¼ cup Mint leaves.
* 2 Green chillies - Cut into two.
* 1 Cup fried onions (Birista)
* Yogurt - 150 grams.
* Mix well.
* Set aside for 30 minutes to marinate (NOTE:- For the best flavor, i recommend marinating overnight so that the spices get completely absorbed into the chicken)
☛TO COOK THE RICE:-
* Boil 2 litres of water & add 2 tsp of salt, 4-5 Cloves, 3 Cinnamon sticks, 7-8 Whole black peppercorns, 1 Star anise, 5-6 Cardamoms, 1 tsp Caraway seeds, 2 Bay leaves, ½ cup chopped coriander leaves, ½ cup mint leaves, 2 tbsp oil, ½ Lemon juice & add Basmati Rice - 600 grams (Washed & Soaked).
* Stir & mix well.
* Bring to a boil & cook the rice for 8-9 minutes until it is 90% cooked.
* Strain it & keep it aside for further use.
☛TO COOK THE CHICKEN:-
* Heat ½ cup of oil in a kadai.
* Now add 1 tsp of Caraway seeds, 1 Star anise, 5 Cardamoms, 5 Cloves, 1 Mace, 2 Cinnamon sticks & 8-10 whole black peppercorns. Stir & fry them.
* Now add the marinated Chicken. Stir & cook on medium flame.
* Wash the vessel in which we marinated the chicken pieces & pour that water into the kadai (WOK). Stir, mix & cook well.
* Close the lid & let it cook on medium flame for 5-6 minutes.
* Open the lid after 5-6 minutes. Stir & mix well.
* Close the lid & let it cook on low flame for 5-6 minutes.
* Open the lid after 5-6 minutes. Stir & mix well.
* Close the lid & let it cook on low flame for 5 minutes.
* Open the lid after 5 minutes. Stir & mix well.
* Our chicken is cooked well, so keep it aside for further use.
☛FOR PARDA (DOUGH):-
* Take Palin Flour - 200 grams.
* Add ½ tsp Salt.
* ½ tsp Sugar.
* ¼ tsp Baking Soda.
* 2 tsp Yogurt.
* 2 tsp Oil.
* Mix well.
* Add little water or as required.
* Knead to smooth & soft dough.
* Our Dough is ready.
* Now let it rest for 8-10 minutes.
