00:00We continue our visit to SV Di Laudato's Seafarm here in Tagaytay to taste the fresh vegetables that they grow.
00:09Who would have thought that this small land during the pandemic could be used by priests and seminarians to be one of the destinations in Tagaytay if you are looking for a different eco-spiritual experience.
00:24So their 6 hectare property, I think, if I'm not mistaken, about 10 to 20% of it is their actual farm.
00:33And one of the things that they grow here is cabbage.
00:38They have a lot of different kinds of vegetables, lettuce, they also have fruit-bearing trees around.
00:44But this is what I want to highlight because usually when you say cabbage, it is a sidekick of other vegetables.
00:56But with our seared cabbage, I will show you how it becomes a star.
01:06What are the secrets or what are the techniques that you can use to elevate the very simple ingredient?
01:12This is one of the secrets of delicious food.
01:16And those who are good at cooking, you can make your own broth.
01:19So we have here different bones of different animals.
01:24We have chicken, we also have beef, and the skin of carrots, the trimmings of celery.
01:33We are just going to blanch our cabbage in this broth.
01:40So imagine the flavor that we are infusing in our cabbage.
01:46We are going to simmer this for around 10 to 15 minutes and then we will remove it to finish off with butter.
02:01So we're on our 10th minute.
02:04For me, this is just right.
02:07This is still half-cooked, not cooked all the way.
02:12Because as we said, we will be finishing this off by searing it in butter.
02:21So we have removed our cabbage.
02:25For me, this is also an important part of this very simple dish.
02:31We finish it off by searing it in our butter.
02:35By doing this, it intensifies the crust with the caramelization that will happen.
02:41So in a way, this also gives a contrast of texture.
02:47So in a way, your simple ingredient, because of these cooking techniques that we used, has changed.
02:54It has its own identity.
02:57So butter, in.
03:09So once we have gotten the caramelization that we want on the outside, we can serve it.
03:28Please dig in.
03:30This is our crispy tajang.
03:33This is our seared cabbage.
03:35Go ahead and eat.
03:42It's delicious.
03:43Try it.
03:44Sir, don't be shy.
03:46It's delicious.
03:47Here you go.
03:50There you go.
03:51You have to finish it off.
03:53I just boiled it and seared it a bit.
03:57Usually, when it comes to cabbage, it's like that.
04:01It's like a sidekick.
04:03At least, you can make it into a dish.
