00:00The lanes of Masala in Sharjah are well known for their bakeries selling fresh Afghan bread.
00:16Owned by Afghans, these bakeries have been in business for decades with customers from
00:20all walks of life.
00:24Haji Niaz Mohammad is an Afghan in his late 40s.
00:28He has been making bread for more than 27 years.
00:34He along with his four staff roll out nearly 2,000 Afghan breads every single day.
00:43Haji says he is proud of being able to bring a slice of Afghanistan to his customers.
01:06His staff are fellow Afghans and he considers them as family, with whom he shares his life
01:11experiences at lunch and dinner time.
01:22Haji explains that maintaining the right degree of heat in the oven is essential to achieve
01:27the softness for which the Afghan bread is known.
01:57The traditional oven or tandoor sits above ground and is round and made of bricks.
02:16It is first heated and then the rolled out bread is stuck onto the sides of the oven
02:21to bake.
02:25The proud Afghan is all set to hand over his business to his eldest son Atta Mohammad,
02:30who recently arrived in UAE.
02:32As for now, Haji Mohammad seems happy, content with rolling out freshly baked Afghan breads
02:38for his customers.
