00:00The Baler is located between the Pacific Ocean and the mountains of Sierra Madre.
00:08Because it is located in front of the Pacific Ocean, the waves here are big and high.
00:15It is known as the birthplace of surfing in the Philippines.
00:21A large part of the Baler Aurora is surrounded by water,
00:27specifically the Pacific Ocean.
00:30We are now here in the Baler Bay.
00:33And of course, if there is a coastal community, there are a lot of fish.
00:37We will eat a lot again today.
00:40Now, our special fish that we will catch here is called Dorado.
00:47Do you know what Dorado means to me?
00:49Dorado in Spanish is Gintuan.
00:52Because it has a gintu, no, it has a gintu color.
00:58These fish are a bit big, so we will get them from that boat using a kayak.
01:07Because the Dorado fish are caught in the deep part of the sea,
01:12the fishermen have been staying in Laot for several days.
01:16Brother Danny, how are you?
01:19How are you? Is this your kayak?
01:22Yes, ma'am.
01:23We will not ride this?
01:24Yes, we will ride it.
01:25Oh, we will ride it? I thought we will just row it like that.
01:29Yes, we will also push it.
01:31We will push it or ride it up?
01:32Yes, ma'am.
01:33Oh, like that?
01:34Yes, ma'am.
01:35Okay, can we do this?
01:36Yes, ma'am.
01:38Their boat is not close to the deep part of the sea because it can get washed away and damaged.
01:44That is why they use an improvised kayak to carry the fish from the boat to the shore.
01:51Their kayak is different from the styro, which is made of bamboo and has a handle.
01:58We can do this.
02:14The price of a dorado fish is Php 120 to Php 140 per kilo.
02:21And for a dorado, if it is big, it can reach up to 15 kilos.
02:26What is that? It looks like a dinosaur.
02:32Dorado has this kind of color.
02:36It has streaks of yellow.
02:38It swims very fast under the sea so it is hard to catch it.
02:44The dorado or dolphin fish is also known as mahi-mahi.
02:49Its weight ranges from 6 to 15 kilos.
02:52It is so big.
02:54It looks like a baby's belly button.
02:56It looks like a baby's belly button.
02:59It looks like a baby's belly button.
03:02It looks like a 4 or 5 year old baby's belly button.
03:06It is so big.
03:12Wow, this one has more strings.
03:18It is so big.
03:21It is so cute.
03:22Is it a saint?
03:23Wow, I know this one. It is so delicious.
03:27Yellowfin.
03:30Yellowfin tuna.
03:33Isn't it called tambacón?
03:35Yes, tambacón.
03:38Wait, I think this is a different kind of surfing that I tried in Balera.
03:47Wait, here it comes.
03:48There's a wave.
03:50Wait, here it comes.
03:51There's a wave.
03:56Can I go home?
03:58No, no, you can't go home.
04:01It's so heavy.
04:04It's so big.
04:06We have something to eat.
04:081, 2, 3.
04:12We can feed the whole barangay because we caught a lot.
04:19Before the fishermen come here,
04:22there are people who are already catching fish.
04:25So when the fish are caught,
04:28it goes straight to the wholesalers.
04:33Are you Ate Shania?
04:35Is it Shania?
04:36It's Shania.
04:37Shania twin.
04:39This one is so big.
04:40It looks like a dinosaur.
04:436 kilos.
04:446 kilos.
04:4818.3 kilos.
04:51It's dourado again.
04:53Can I have 6 kilos?
04:56Yellowfin.
04:57What's more expensive, dourado or yellowfin?
04:59Yellowfin, ma'am.
05:01How much is yellowfin?
05:02200 pesos.
05:03How much is dourado?
05:04150 pesos.
05:07Okay.
05:08So the total for dourado is 3,253 pesos.
05:11The yellowfin is 1,178 pesos.
05:15The salmon is 2 kilos.
05:17But there's a 5% discount so it's 380 pesos.
05:20It's only 380 pesos.
05:21So the total is 4,811 pesos.
05:25Make it 5,000 pesos.
05:28So this is the fish that we caught, dourado.
05:32And as you can see, there are tomatoes,
05:35there's also siling pangsigang because we're going to cook sinigang na dourado.
05:39But there's a twist.
05:41The sinigang that Chef Ronald is going to cook for us is placed on a sizzling plate.
05:47What do you call this type of dourado?
05:51Sizzling sinigang dourado with catmon.
05:55With catmon.
05:56So the sourness of the chef's dish is not the yellowfin, but the fruit of catmon.
06:03Oh, I know this.
06:05This is sour.
06:06Yes, it's sour but the sourness is fruity.
06:16We made a fish stock.
06:18We boiled the fish that we caught with catmon.
06:26Oh, it's delicious.
06:27For me, this is okay.
06:30First, season the dourado with pepper, salt, and calamansi.
06:37Then, fry it.
06:43It's beautiful. It's white.
06:45While the fish is being fried,
06:48we can make the sauce for the sinigang.
06:51In a pan, boil the dourado broth.
07:00Next, mix the slurry or melted cornstarch with water.
07:04This is what will make the sauce thick.
07:07Next, add the string beans, cabbage, and mustard.
07:12Meanwhile, in the other pan, mix the fried dourado with tomato, long pepper, and catmon.
07:19It's like a deconstructed sinigang.
07:24Later, we can assemble it on a sizzling plate.
07:34Wow! It's really hot!
07:37Sizzling dourado sinigang with catmon.
07:41Let's taste it.
07:42It looks so fancy.
07:45Let's taste it.
07:54Oh, I forgot that it's sizzling.
07:58The dourado is chewy.
08:01It's more tender than tuna.
08:04Then, the sinigang with catmon.
08:09The catmon's sourness is delicious.
08:11It has a fruity flavor that goes well with the dourado.
08:15This is good.
08:17Delicious!
08:39Thank you for watching!
