00:00I was born in 1960 in Queen Charlotte in Chiswick, West London, grew up with a family of five.
00:11Was basically in the kitchen with my mum cooking, and that's how we get the vibe for the cooking.
00:17Came to Bexhill in 2018, couldn't find any food, so I decided to do my own thing,
00:26get some authentic Jamaican food to the area, and I've ended up here on Sackville Road doing it.
00:35Jamaican food is really about flavours, more than heat.
00:40We're using curry goat, jerk chicken, oxtail, chickpea curries,
00:48and it's mainly about the flavours and all the fruits and the passion in the cooking.
00:56And we are more lively people and are happy people, the Jamaicans.
01:01So, I've opened the kitchen for a nice vibey kitchen, rather than the restaurant, you know, militarised stable restaurant.
01:11More of a vibey place, so that we can just enjoy the food, enjoy the West Indian music, or the Caribbean music,
01:19and drink a few cocktails.
01:23Our food really is very healthy food, mostly organic, coming in from Jamaica.
01:31We eat most of the food from the land, yams, bananas, and a lot of citrus, which is involved in the cooking.
01:40We use citrus in our cooking.
01:42Since moving to Bexhill, I've found that it's a lovely community.
01:46There's no stress and strains here like London, and I'm now hoping to do work with warming up the homeless,
01:54and also looking for any suggestions that we can do here at the One Love Melting Pot,
02:01to help, and help the community, for the community to join in with what we're doing.
02:07We're looking to do evenings for the community, maybe some cakes and coffee.
02:13I'm also looking to, if we have any homeless people that would like to just come in and have a coffee,
02:18they're more than welcome.
02:20And anything that we can do that enhances the community for what we're doing here at the One Love Melting Pot.
02:28The kitchen is a place that, is a happy place, and my aim is to have people coming in smiling, and leave smiling.
02:38It's more of a vibesy place where we like people to be talking to each other, get to know each other,
02:44more of a relaxed lounge and eating place.
02:48We have an open kitchen so that people can see exactly what we're doing,
02:52and they're confident in the way that we prepare our food, and that our kitchen is nice and clean.
02:57And our bar will be serving the Caribbean cocktails,
03:05Jamaican white rum, Appleton Estate rum, and everything Jamaica.
03:12So let's wait.
