Recipe to prepare "Gaajar ka Achaar":

Ingredients:
2 carrots
1 tsp vinegar
1 pinch salt
1 pinch red chilli powder
For Masala:
4 tbsp fennel seeds
3 tbsp coriander seeds
1-1/2 tbsp fenugreek seeds
1 tbsp cumin seeds
1 tbsp onion seeds/kalaunji
1/2 tsp black salt
8 tbsp mustard oil
1/2 tsp asafoetida
1/2 tsp turmeric powder
1/2 tsp red chilli powder
8 tbsp yellow mustard
1 tbsp salt
For Achar:
3 tbsp mustard oil

Method:
Take carrots, peel and dice them.
Put them in a bowl, and add vinegar. Mix well.
Add salt and red chilli powder; mix again and keep it aside.
For Masala:
Heat a pan on low flame.
Add fennel seeds; toss and dry-roast for around 30 seconds.
Add coriander seeds and fenugreek seeds; mix well.
Add cumin seeds and onion seeds; toss and dry-roast for 2-3 minutes on low flame, until spices give out fragrance and their color changes.
Let spices cool to room temperature, and grind coarsely in a mixer/grinder, by adding black salt.
Heat oil in a pan.
Put off the flame, and let oil cool a little.
Add asafoetida, turmeric powder and red chilli powder; mix well.
Add ground spices, and mix again.
Add yellow mustard, and mix well.
Add salt, and mix it.
Masala is ready.
For Achar:
Take the bowl of carrots; stir once and add sufficient masala to them. Mix well.
Add mustard oil, and mix again.
Store it in an air-tight container.
Gaajar ka Achar is ready to use.
