00:00Namaskar! Welcome to Bachelor's Cooking. Today we will teach you how to make Punjabi Gatta Masala.
00:17Gatta is a speciality of Rajasthan but in Punjab Gatta is made in a different way.
00:22So let's start making Punjabi Gatta Masala.
00:25For this we need 400 grams of chickpea flour.
00:31After this we will add a little salt to the chickpea flour.
00:38There will be salt in the gravy but the gatta will be salty so we will add a little salt to the chickpea flour.
00:47A little turmeric powder.
00:501 teaspoon of turmeric powder.
00:551 teaspoon of Kashmiri red chilli powder.
01:01We will add this to the chickpea flour.
01:03After this we will add dry fenugreek leaves.
01:06This gives a very nice flavor.
01:08Crush it and add it to the chickpea flour.
01:10After this we will add a little extra virgin olive oil.
01:13If you don't have olive oil then you can use normal oil.
01:16Add about 1 teaspoon of olive oil to the chickpea flour.
01:21Mix it well so that there are no lumps in the chickpea flour.
01:26After mixing it well we have to knead it.
01:29We have to knead it very hard.
01:31So add a little water little by little.
01:35If you add too much water then the batter will become soft.
01:38And we need a very hard batter for this.
01:42So our chickpea flour is ready.
01:44We have kneaded it very hard.
01:46For this we have to prepare a stuffing.
01:48So for this we will take about 50 grams of paneer.
01:51Here we have taken paneer.
01:53We will add a pinch of salt.
01:55So that you can feel the salt in the stuffing.
01:59After this we have to add dried mint leaves.
02:05Yes, we have to add dried mint leaves.
02:07These dry fenugreek leaves and mint leaves give a very nice flavor.
02:10They give a royal flavor.
02:11So we have added about 1 teaspoon of dried mint leaves.
02:16And mash it well.
02:18There should be no lumps in it.
02:20There should be no lumps in it.
02:21After mashing it well.
02:23We have to prepare our stuffing.
02:25We have to add more dried mint powder.
02:27So that the flavor becomes very strong.
02:32So our minty stuffing is ready.
02:35Which has a very strong mint flavor.
02:38And it has the richness of cottage cheese.
02:42And we have to knead it very well.
02:46And when you tie it like this.
02:49It will get tied.
02:50So assume that your stuffing is ready.
02:52You can see that it is getting tied.
02:56So that means there will be no lumps in it.
03:00So now we will stuff the gattas.
03:03So let's start stuffing.
03:05For this you take a big ball of dough.
03:08And roll it like this.
03:11After rolling it.
03:13Press it with your finger like this.
03:15And flatten it.
03:18Flatten it properly.
03:21After that put stuffing in it like this.
03:27Press it a little.
03:36After rolling it properly.
03:39Your stuffed gatta is ready.
03:44Keep it in a plate.
03:46And prepare another gatta in the same way.
03:52So our stuffed gattas are ready.
03:54Now what we have to do is.
03:56We have to boil the water in a pan.
03:58And in the boiling water.
04:00Add a pinch of salt.
04:04So that the water starts boiling faster.
04:06And add 1 spoon of oil.
04:10So that the gattas don't stick to each other.
04:14And after this.
04:16Our stuffed gattas.
04:19Lift them carefully.
04:21And drop them in the water.
04:26And to know if the gattas are cooked or not.
04:29I am telling you a simple trick.
04:32As soon as they are cooked.
04:33They will start floating in the water.
04:35So put another gatta in it.
04:38Like this.
04:40And let it boil for 5 minutes.
04:42Until the gattas start floating.
04:44As soon as the gattas start floating.
04:46It means that they are cooked.
04:47So let's wait for 5 minutes for them to cook.
04:53So now our gattas have cooled down.
04:55So let's cut them.
04:59So cut them according to the size you want.
05:06You will see the stuffing in the middle.
05:10It will look beautiful.
05:11And it will be very tasty to eat.
05:13Try to cut them in equal size.
05:18So our gattas are cut.
05:21Now we have to prepare a masala for them.
05:24So let's prepare the masala.
05:26For this you have to take a mixing bowl.
05:28For the masala we need.
05:30Take 1 spoon of cumin seeds.
05:35After that.
05:371 spoon of turmeric powder.
05:40Now take 1 spoon of coriander seeds powder.
05:47After that.
05:49Kashmiri red chili powder for color.
05:51Take 1 spoon of it.
05:52It will give a nice color.
05:53It will also give a little spiciness.
05:55And the garam masala that we had prepared.
05:58Add some garam masala in it.
06:01And after that.
06:04We will add 7-8 cloves of garlic in it.
06:09Add the garlic in it.
06:12Add 1 inch of ginger in it.
06:16And add 1 medium sized onion in it.
06:20Onion.
06:221 onion cut into big pieces.
06:25It thickens the gravy.
06:28And now we will grind it.
06:37Our masala is ready.
06:39First of all let's turn on the gas.
06:43And we will add 1 spoon of oil in it.
06:49And spread the oil.
06:51And after that.
06:56We will add 1 medium sized onion in it.
07:00Onion in it.
07:06And toss it.
07:12Fry the onion well.
07:18So our onion is fried.
07:20Now we will add the masala that we had prepared.
07:24Add the masala in it.
07:27And cook it well.
07:32Cook it till the oil starts to separate.
07:36If you want you can add some water in the middle.
07:38If the masala starts to stick to the bottom.
07:40Cook it on high flame.
07:43Now our masala is cooked.
07:45Now we will add about half a bowl of curd in it.
07:48And always remember to stir it fast after adding the curd.
07:50Otherwise the curd will splatter.
07:53So add half a bowl of curd in it.
07:56In gatta masala curd is used more.
07:58Because there is no gravy in it.
08:00And stir it fast.
08:02And turn off the flame.
08:07And stir the curd well.
08:11So that it dries completely.
08:14Now our curd is dried.
08:16And the masala is also cooked well.
08:18Now we will add 2 tomatoes in it.
08:20Which we have ground.
08:23So add the tomatoes in it.
08:27And stir it on high flame.
08:31And always add salt after adding tomatoes.
08:33So that the tomatoes cook fast.
08:35So now we will add salt in it.
08:37As per taste.
08:39About 1 spoon of salt will be added in it.
08:41Add salt in it.
08:47And cook it well.
08:50Now our tomatoes are also cooked.
08:52Now we will add gattas in it.
08:54Which we have cut.
08:56Add gattas in it.
09:02And stir it very carefully.
09:05And with light hand.
09:08So that the masala covers all the gattas.
09:13And after this.
09:15After mixing it well.
09:19We have to cover it.
09:21And cook it on low flame for 1 minute.
09:23So that the masala covers all the gattas.
09:26If you want you can add a little water in it.
09:28As there is no water in our masala.
09:30So we will cover it.
09:33Cover it for 1 minute on low flame.
09:35Till the time the gattas absorb the masala.
09:39And your Punjabi Gatta Masala is ready.
09:42So 1 minute is over.
09:44Let's see our gattas.
09:46Yes our Gatta Masala is ready.
09:48Let's serve it.
10:05Thank you for watching.
