INGREDIENTS:
150G PLAIN TORTILLA CHIPS
100G FETA CHEESE
80G SOURCREAM
3 TABLESPOONS SLICED PICKLED JALEPENOS
CORIANDER LEAVES TO GARNISH
FOR THE REFRIED BEANS:
4 TABLESPOONS VEGETABLE OIL
1 ONION, FINELY CHOPPED
6 GARLIC CLOVES, FINELY CHOPPED
1 TABLESPOON CUMIN SEEDS
1 TEASPOON GROUND CORIANDER
1 X 400G CAN PINTO BEANS, DRAINED AND WASHED
300ML FRESH WHITE CHICKEN STOCK / VEGGIE STOCK
SEA SALT FLAKES AND FRESHLY GROUND PEPPER
METHOD
TO MAKE THE REFRIED BEANS, HEAT THE OIL IN A FRYING PAN. ADD THE ONION AND FRY SLOWLY FOR ABOUT 10 MINUTES OR UNTIL SOFT AND LIGHTLY GOLDEN, ADDING THE GARLIC AND CUMIN SEEDS DURING THE FINAL 1-2 MINS. ADD THE GROUND CORIANDER AND FRY FOR A FURTHER 30 SECS. ADD THE BEANS, STIR TO COAT WITH THE ONIONY SPICES, AND THEN POUR OVER THE STOCK. BRING TO A GENTLE BOIL, THEN REDUCE THE HEAT AND COOK OVER A LOW HEAT FOR 10 MINS. WHEN THERE ARE ONLY ABOUT 3 TABLESPOONS OF THE LIQUID LEFT, BLEND THE BEANS IN A FOOD PROCESSOR UNTIL SMOOTH. WIPE THE FRYING PAN CLEAN AND THEN RETURN THE BEANS TO THE PAN (YOU MAY NEED A SPOT MORE OIL WHEN DOING THIS DEPENDING ON HOW NONSTICK YOUR PAN IS). FRY THE BEANS FOR ABOUT 5 MINUTES OR UNTIL THEY CHANGE COLOUR AND THICKEN UP (THEY SHOULD BE THICK LIKE HUMMUS). SEASON TO TASTE WITH PLENTY OF SALT AND PEPPER.
PREHEAT THE OVEN TO 200C / GAS MARK 6.
PLACE THE TORTILLA CHIPS IN AN OVERNPROOF BOWL AND TOP WITH THE MELTED CHEESE. BAKE THEM FOR 10 MINS OR UNTIL THE CHEESE HAS MELTED. REMOVE FROM THE OVEN AND TOP WITH A LAYER OF THE HOT REFRIED BEANS. NEXT, TOP THIS WITH A GOOD 2 TABLESPOONS OF GUACAMOLE, THEN THE SAME AMOUNT OF SALSA AND THE SAME AMOUNT OF SOURED CREAM. SPRINKLE OVER THE JALEPENOS, GARNISH WITH CORIANDER AND YOU’RE GOOD TO GO.
