Tim shares with us his mum’s awesome loaf cake recipe, great to eat after a hike or workout to help give you a healthy boost of energy.

RECIPE
INGREDIENTS:
1 MUG ALL BRAN CEREAL OR SIMILAR
1 MUG MIXED DRIED FRUIT
1 MUG SELF RAISING FLOUR
1 MUG COLD TEA OR SOYA MILK
1/2 MUG COCONUT SUGAR

METHOD
PUT ALL BRAN, SUGAR AND FRUIT IN LARGE BASIN AND STIR.

STIR IN LIQUID AND LEAVE FOR MINIMUM OF 2 HOURS OR OVERNIGHT.

SIEVE IN FLOUR MIXING WELL AND THEN POUR MIXTURE INTO A WELL-GREASED 2 LB LOAF TIN LINED WITH GREASEPROOF PAPER ON BOTTOM.

BAKE ON GAS MARK 4 OR 160 DEGREE ELECTRIC UNTIL RISEN AND COOKED THROUGH (APPROXIMATELY 1 HOUR).
