Ingredients:-
For Garam Masala Paste:- 2 Medium Onions (Chopped and Sauted) 1 tbsp. Oil 2 tbsp Corainder Seeds Bay Leaves 1 tsp Cumin Seeds 1 tsp Aniseed 2 Black Cardamoms 5 Green Cardamoms 1” Cinnamon Stick 10 Cloves 10 Black Peppercorns 1 Mace Stone Flower 20 Dry Red Chillies 1 tbsp Poppy Seeds 1 tsp Mustard Seeds ½ cup dry grated coconut 1tbsp Sorghum Flour
For the Mutton:- ½ kg. Mutton 3-4 tbsp. Oil 2 tbsp Ginger-Garlic Paste Salt to taste
Method:- Garam Masala Paste:- Heat oil in a pan and saute chopped onions in it till golden brown. Simultaneously, heat oil in another pan and saute the Garam Masala ingredients on a low flame. Once the garam masala starts emitting an aroma add the grated coconut to it and roast it all together. Once the spices are roasted and cooled down to room temperature add sorghum flour to it and transfer them to a mixer/grinder alongwith the sauted onions and grind all these ingredients to a fine paste.
The Mutton:- Heat oil in a pressure cooker and saute the mutton in it till slightly brown. Then add ginger-garlic paste to it and saute again till the raw aroma of the ginger and garlic goes away. Now, add the finely ground garam masala paste to the mutton followed by salt as required and mix it well. Add a litre of water and cover the pressure cooker with the lid and cook it for 3 whistles and then on low flame for 10 minutes.
Spicy Saoji Mutton is ready to be eaten. Serve this spicy mutton gravy with Bhakari or Chapati and some onion salad.
