Ingredients:-
For the Stock:-
250 gms. Mutton on the bone
2” piece of Ginger
4-5 cloves of Garlic
1-2 Bay leaves
1” cinnamon stick
1 tbsp. Coriander seeds
1 tbsp. Cumin seeds
3-4 Cloves
1 tbsp. Salt
3 Green chillies
For the Rice:-
1 cup of Rice
2 tbsp. Ghee
2 cups Stock
1 onion
1 tbsp. Garam masala
1 tsp. Red Chilli powder
Salt, to taste
Fresh coriander for garnish
Method:-
- In a pressure cooker add water, mutton, onion, ginger, garlic, bay leaves, black cardamom, cinnamon, coriander seeds, cumin seeds, black pepper, cloves, salt, green chillies and stir.
- Put the lid on and pressure cook for 5-6 whistles.
- In a pot heat ghee and add cumin seeds, onion and cook until the onions have softened.
- Once the mutton is cooked remove the mutton pieces from the cooker and add to the pot and add garam masala, red chilli powder, salt and cook with the lid on for a few minutes.
- Pour the stock in the pot followed by the rice and boil with the lid on for 7-10 minutes.
- Garnish with coriander leaves and serve.
Delicious Mutton Chawal is ready to eat!
