Ingredients:-
1½ cup Black Bengal Gram (washed, soaked overnight in 3 cups of water and pressure cooked with 1½ cup additional water and 1 tsp. Rock Salt for 3-4 whistles)
2 tbsp. Ghee
1 tbsp. Cumin seeds
2 tbsp. Ginger, chopped
2 Green chillies, chopped
½ tsp. Turmeric powder
1 tsp. Chilli powder
Rock salt, to taste
2 tsp. Coriander powder
1 tsp. Cumin seed powder
1 tsp. Red chilli powder
½ tsp. Aamchur powder
1 tsp. Garam Masala
Coriander leaves
For Puris:-
Oil for frying
½ tsp. Salt
1 tsp. Carom seeds
2 tsp. Oil
Water
1½ cup Wheat Flour
Method:-
1. In a pan heat ghee and add cumin seeds, ginger, green chillies, turmeric powder, red chilli powder, water from the boiled chickpeas, chickpeas and cook until the water dries out.
2. Now add rock salt, coriander powder, cumin seed powder, red chilli powder, aamchur powder, garam masala and coriander leaves. Mix well.
3. Knead a dough of the puri ingredients and roll out puris from it.
4. Fry the puris in oil.
Sukhe Kaale Chane are ready to eat with Puris!
