Learn how to make Dappalam- South Indian Style Mixed Vegetable Stew \ Dappalam Recipe By Lakshmi Only On Variety Vantalu.
Dappalam is a very fine and traditional delicacy of Andhra Kitchen. If Sambar is to the State of Tamilnadu, then Dappalam is to State of Andhra Pradesh. Both dishes are common in, vegetables getting cooked in tamarind stew but Sambar is cooked along with lentils ( Pappu), where Dappalam is served along with lentils (Pappu). That is the difference. This is also called as 'Mukkala Pulusu', (ముక్కల పులుసు) literally translates to Mixed Vegetable Stew.

Ingredients:
2 Cups Bottle Gourd ( chopped)
1 cup Sweet Potatoes ( chopped)
1 cup Pumpkin ( chopped)
1/2 cup Drumstick ( chopped)
4 to 5 green chilies ( chopped)
1 cup Tamarind Juice
1/4 tsp Turmeric powder
1/2 cup jaggery
2 tbsp rice flour
3 - 4 cups water or as needed
Salt to taste
Coriander Leaves
For Seasoning:
1 tbsp oil
1 tsp Mustard Seeds
1/2 tsp fenugreek seeds
4-5 Dry Red Chillies

Method:
1. Take 2 cups of water in a vessel, add chopped bottle gourd, chopped Pumpkin, chopped Sweet Potatoes, chopped drumsticks into 3 inches pieces, green chilies
2. Keep stove on high flame and boil the vegetables.
3. Cook for few minutes until all the veggies are tender and make sure not to overcook the vegetables.
3. Add Tamarind juice. Mix and cook for 2 ~ 3 minutes in medium heat.
4. Once it is cooked well next, add jaggery and continue to cook.
5. Heat a pan, add oil. When oil becomes hot, add mustard seeds. Allow them to crackle. Then add remaining seasoning ingredients. Add this seasoning to the gravy
6. In a separate bowl, mix rice flour with little water and make a lump free mixture. Not to thick or too thin.
7. Add this rice flour mixture to the vegetable mixture. Mix and cook for another 4 ~ 5 minutes until gravy thickens to desired consistency (sauce consistency). Adjust salt to taste.
8. Garnish it with coriander leaves.
Enjoy with hot steamed rice and plain dal.
