Are you so over the ho-hum meatloaf that makes an appearance on your dinner table about every other week? It's hard to beat the ground beef meets bread crumbs classic, especially when it's served alongside potatoes, but let's be honest: it's outdated look is doing nothing for it. So it's time to spice things up with a little blast that will send this main dish into the 22nd century - it's seriously that far ahead of its time!
You'll Need:
- 3 slices of bread
- 3 fl oz milk
- 2 lbs ground beef
- 2 tbsp parsley, chopped
- 2 tbsp chives, chopped
- 1 red onion, diced
- 2 eggs
- 3 oz bread crumbs
- salt & pepper
- 1 lb potatoes
- 7 oz shredded cheese
- 1 yeast roll
- 15 oz tomato sauce
Here's How:
1. Preheat the oven to 325°F and start boiling the potatoes. Soak 3 slices of bread in a bowl of milk.
2. Add the ground beef, chopped parsley, chopped chives, diced red onion, and two eggs to a bowl. Add the bread crumbs and season with salt and pepper. Take the bread slices from the bowl of milk, squeeze the liquid out of them, add them to the bowl of meat, and mix everything together by hand.
3. Place a small glass face down in the center of a large oven-proof bowl and spread the meat mixture around the glass so that it is completely covered.
4. Cut the boiled potatoes into smaller pieces, sprinkle cheese on top, and spread over the meat mixture in the bowl. Press everything down with a spoon so that you have a firm and even surface on the bowl. Put the bowl directly in the oven and cook for 90 minutes.
5. Remove the bowl from the oven and place it on a large plate. Remove the small glass from the middle and put a yeast roll in the hole. Pour the tomato sauce over the roll so that the hole is almost completely filled. Put the plate with the volcano back in the oven and cook at 375°F for 15 minutes. The roll will expand while cooking, which will push the tomato lava up and out of the meat volcano crater.
