Method:
• Take water in a pan and add milk.
• Add ghee and bring it to boil.
• When the mixture begins to boil turn the heat to lowest setting and add rice flour.
• Mix in quickly.
• Cover and steam on low heat for about 5 minutes.
• Turn off the gas and let the mixture be as it is for about 30 minutes.
• Heat up ghee in a pan.
• Add fresh coconut and fry for about 2-3 minutes to reduce the moisture in it.
• Move it aside and add ghee.
• Add poppy seeds and fry well.
• You can fry poppy seeds before frying coconut.
• Mix everything well together and add gudh, dry nuts.
• You can skip dry nuts if you don’t want. Adding dry nuts is completely optional.
• Mix well and cook until gudh melts. No need to cook.
• Turn off the gas and add cardamom powder, nutmeg powder and mix well. Stuffing is ready.
• Take ukad into a dish and knead it really good for about 7-8 minutes.
• Take a small ball from ukad and make it nice and smooth.
• Keep the remaining ukad covered with wet cloth.
• Make a pari from the ukad ball.
• The pari should be thin at the edges and thick at the center.
• Make the base portion also a little thin so that the portion between base and edges will be a
little thick to make murad.
• Fill the stuffing and make the plates along the sides like our regular ukadiche modak.
• Bring the plates together and seal them well to close the modak.
• Pinch the middle a little portion and make a ring of it.
• Make that ring flat and even by pressing.
• Pinch a small portion and fold it. It is known as murad.
• Continue the process all over the ring. Murad modak is rolled ad ready.
• Keep the rolled modak covered with a wet cloth.
• Heat up water at the base of the steamer.
• Place a wet cloth in upper pot of the steamer.
• Place modak on the cloth and add saffron on each modak.
• Close the lid and steam modak on medium heat for about 7-8 minutes. Do not steam longer.
