Aloo Cha Fadfada (Alu Chi Bhaji) is a traditional Maharashtrian delicious main course recipe where Alu (colocasia leaves) are cooked in coconut paste and Mix Masala. Our chef Archana brings you this simple and easy to make vegetable on Ruchkar Mejwani.
Ingredients:
8-10 Colocasia leaves
1/2 Cup Coconut Paste
1/2 Cup Soaked Groundnuts
1 1/2 Cup Water
1 tbsp Oil
1/2 tsp Cumin Seeds
1/2 tsp Turmeric Powder
1 tsp Mix Masala
1 tbsp Jaggery
1 tbsp Tamarind Paste
Coriander Leaves
Salt to taste

१ tbsp चिंचेचा कोळ

Method:
- In a pressure cooker, heat some oil. Then add coriander leaves, cumin seeds, turmeric powder & colocasia leaves. Saute everything.
- Add groundnuts, mix masala, jaggery & salt. Mix all the ingredients well.
- Add water and let everything cook up to 3 whistles.
- After 3 whistles switch off the flame and keep the cooker aside for 5 minutes.
- After 5 minutes open the lid of the cooker. Add the coconut paste and tamarind paste. Also add little water and mix well.
- Put the pressure cooker again on flame and let everything simmer for 5 minutes.
- Serve this bhaji with rotis or plain rice.
