I love crispy and juicy chicken cutlet, but getting it right sometimes can be challenging. I found a better way in making this perfect chicken parmesan, by coating it with egg and crumbs once, which creates a thin and crispy crust (I'm using cracker crumbs for this, it gives salty taste and different texture than the regular crumbs.)
This homemade chicken parmesan is so crispy and so tasty, totally worth breaking all my healthy eating lifestyle. This recipe is not too spicy, just a slightly spicy taste from the cayenne pepper. You know what's better? Having this spicy chicken parmesan with aglio olio pasta or pasta marinara sauce, yum, perfect match!

How to make spicy chicken parmesan, you'll need :
250 gr skinless chicken breast
Salt pepper
1 egg
120 gr cracker crumbs
1/4 tsp onion powder
1/8 tsp cayenne powder
100 gr parmesan
4 tbsp mayonnaise
1/8 cayenne pepper
2 tbsp parmesan cheese
