00:00 So, let's get cracking.
00:04 Okay, our first job is to cover the two cakes.
00:08 So I've already covered the bottom tier and I'm going to show you how to cover the middle
00:13 tier now.
00:14 So I've just put buttercream all over my cake and I'm going to put that to one side and
00:19 then take, now I've got this lovely pink, it's from Satina, it's the Satina Make and
00:27 it's such a lovely sugar paste to use.
00:30 It's almost, I always think it feels ready kneaded.
00:33 Okay, so I've given it a little knead just to soften it up.
00:38 Nice dusting of icing sugar and then we're going to roll out our sugar paste to, I would
00:51 say about 5mm.
00:54 We want it quite thick because what we're going to do is we're going to score our brick
00:59 pattern into it.
01:00 So we don't want it too thin because if it's too thin it might go straight through into
01:06 our sponge and we don't want that.
01:09 This is a smoother, if you haven't got a smoother don't worry, you can just do this with your
01:12 hands but I'm just smoothing it over just to get a nice perfect finish and back in with
01:20 our sponge and then over the top lightly cover.
01:26 Give it a good old rub at the top just to make sure there's no air bubbles and then
01:33 cover all the way around the cake.
01:39 Now I shouldn't say this but don't worry too much about it's not perfect because remember
01:42 it's going to be covered in bricks anyway and your little girl is going to be so overwhelmed
01:50 by the design that I'm sure she won't be criticising how it's covered so we won't worry too much.
01:56 If you do have a smoother do just give it a once over around the top and around the
02:01 sides just to try and get it as smooth as you possibly can.
02:08 And then I'm going to put this on a turntable.
02:11 If you haven't got a turntable you could use a lazy susan if you've got one or something
02:15 like that but it's just quite good to have something that you can just turn whilst you're
02:20 cutting.
02:21 It just makes life that little bit easier.
02:27 Just cut right around the bottom, take the excess off and then come down to the right
02:36 level and then with the turntable just go round with the back of a knife.
02:49 So we want the blunt side of a knife because we're just scoring this, we're not cutting
02:54 it we're just scoring horizontal lines to begin with all the way round.
03:07 Again don't worry if they're not even because the whole overall effect is going to be so
03:13 spectacular that you won't notice these differences.
03:18 And now just to finish off your vertical bricks, so let's do round the bottom first.
03:30 You can see where I've sort of cut the bottom a little bit uneven there, don't worry about
03:34 it because as soon as it goes on our cake that's where we'll be covering up with all
03:38 of our flowers etc so don't worry too much if you can see the sponge through there because
03:43 that can be sorted out later on.
03:45 And now the next level, obviously we're doing alternate patterns to get that brick design.
04:02 And there we have one of our tiers.
04:07 Now onto our towers, this is really clever, I've baked in a tin as you can see, just a
04:13 normal tin if you've got some baked beans or some tomato soup or whatever, always keep
04:18 your tins because you can line them, just line them normally like you'd line a normal
04:23 tin, put your, I always put about two thirds up of cake mix and bake them.
04:31 And the thing is, is about these new tin openers or you know the pool cans, is that you've
04:35 still got your little lip there but it really doesn't matter, all it means is that you just
04:39 have to ease it out a little bit more but they come out absolutely perfectly, this is
04:44 what I've got here and it is the perfect height for one of our towers.
04:49 Again I've covered it in buttercream, if you put your buttercream on and then you go off
04:54 and do something else, you come back, sometimes it's crusted over so all you really need to
04:58 do is just scuff it up, you know if you scuff up your buttercream like this just to make
05:02 it sticky again because there's nothing worse than coming back wanting to cover it in sugar
05:07 paste and it's not going to stick.
05:10 So that's what I'm doing, just scuffing it, making sure it's sticky again.
05:14 Now you'll notice that I've got some sugar paste rolled out already, this is obviously
05:20 to cover the tower, we do this a bit differently, we sort of roll it over it but it's really
05:26 quite handy to have a piece of ribbon just so that we can just measure, so I measure
05:32 down, that's just about big enough, that's good and then I need to measure the circumference
05:38 like so, brilliant.
05:43 So I've got enough there because what I actually do this time, it's a little bit different,
05:48 I'm going to score it first and the reason I do that is because it's so tall but so thin
05:54 if I keep going scoring round sometimes you can get really really wobbly bricks so I'm
05:59 going to score it first, so I'm going to take a normal kitchen knife and I'm going to turn
06:06 it over to the blunt side and remember like I did before, I'm going to score horizontally,
06:16 try and sort of get it the same distance apart that your other two cakes were, just so that
06:23 it sort of looks the same but again don't worry too much about it and then do your scoring
06:31 again.
06:44 There we go, so we've scored all our bricks in, let me just double check just again just
06:48 to make sure that I know, I lay that down there like that, now always cut it a little
06:55 bit longer, that's about right.
07:02 There we go, take all those away and now I'm going to turn this upside down and then take
07:24 my tower like so, wipe off the buttercream, that's it and then gently evenly roll it round,
07:41 now the reason that we score beforehand, we can get away with scoring it is because it's
07:45 only small and the weight of it is not going to take away that indentation of the brick
07:51 and as you can see, so much easier to do that.
07:55 That's it, little bit of water just to seal this part here, don't worry about this because
08:05 that's the part that will be against the upper tiers so we won't worry too much about that,
08:11 I'm just going to cut just a little bit off the top, there's a little bit too much there
08:16 but leave a lip because I quite like to tuck it over the top just to neaten it up, obviously
08:25 our turret is going to go on the top but it does look better if it has got a little bit
08:29 tucked in.
08:30 So that's one of our towers done, I'm going to go and get busy doing the other one and
08:35 I'll be back in a sec.
08:37 So into a ball, everything starts with a ball and then what I'm going to do is I'm going
08:44 to just, however you want to do it, whether you want to roll in your hands like this or
08:48 whether you want to pinch up like this or whether you want to roll it along your work
08:52 board like this, what we're obviously trying to get is a turret so the first thing we need
08:59 to do is to make sure that we've got a nice steady and wide enough base so keep checking
09:06 it against the top of your tower.
09:10 The other thing we need to do is to make sure that it matches our other one to a certain
09:14 degree, that one's a little bit smaller but I'm just going to take the top off there just
09:20 so that they do match again but don't worry if it's got any cracks in it or whatever because
09:27 obviously you're not going to see them so that doesn't matter and I think that that's
09:33 probably about the right size, the right height and it pretty much matches my other one.
09:43 So what's really important now is these are plastic dowels, now you can do it without
09:49 but I really like to use plastic dowels, you can buy these from Cake Craft World and they're
09:54 usually used in stacked cakes or wedding cakes or whatever just to keep everything very steady
10:00 and the reason I like to use this is because we're dealing with height here so this is
10:04 going to go down into the middle of our tower and it's also going to continue down through
10:10 our turret just to keep it all together.
10:14 So I'm not actually going to pierce it all the way through here but what I do want to
10:18 do is I just want to make a mark just to show the centre like so, of my turret.
10:29 So I've made a mark like that and then I'm going to leave those just to set just for
10:35 a little bit, about 10 minutes and then we're going to come back and we're going to put
10:38 them all back together again.
10:42 Okay welcome back, as you can see I've been busy rolling out some sugar paste here, what
10:47 I've done is I've taken the pale pink and I've added some food paste colour, this is
10:56 a baby pink colour, to make a darker pink and I've also added some white to this colour
11:02 to make a paler pink so I've got three different pinks, I've got the original pink, I've got
11:06 a darker pink and I've got a paler pink and that's going to make up our tiles on our turret
11:12 but you can have as many different shades as you want or you can just have them all
11:15 one colour, it's totally up to you.
11:18 So now I've got some edible glue here, you can use water but sometimes it's not really
11:25 sticky enough so I would use edible glue if I were you, with a paintbrush and I'm just
11:30 going to put quite a generous amount of edible glue around the top of my tower and then take
11:37 one of my turrets, now do you remember I said earlier that we've put a hole in the middle
11:42 here, the reason we've done that is because my dowel is going to go down into the centre
11:51 of my tower and then now I can see the middle of my turret and now I'm going to gently feed
11:57 that through, try and get it so that it comes out of the point, again if it's not directly
12:03 in the middle don't fret, okay and down into the middle like that.
12:11 So now can you see how handy it is to have this dowel in the middle because it's completely
12:17 sturdy and I can start working on it.
12:20 So I've rolled out my sugar paste, again quite thick, probably to about 4-5mm thick and I've
12:27 got this little metal round circle cutter, again you can use this any size, you can use
12:34 a heart shape cutter, you can use any cutter you like but I've just cut out lots and lots
12:39 of different ones and then I'm going to just put a layer of glue around the bottom, I'm
12:48 going to take my darkest colour, it does usually look better if you use the darkest one at
12:52 the bottom, I'm going to hold my dowel, just steady myself and can you see I'm just going
13:01 round, don't worry about pushing to secure your tiles at the top because when you do
13:11 your second layer you will slightly cover the first ones.
13:19 Okay, that's the first layer, now because I'm only using three different colours I'm
13:31 going to do two layers of the same colour, so I'm just going to show you how to do two,
13:37 I'm sure you don't want to sit and watch me do all of them but I'm just going to show
13:40 you how to put the second layer on, so again I'm going to alternate it, so this one is
13:45 going in between the bottom layer and again this one in between and slightly overlapping
13:58 all the way around and then continue up, so now I will be using my middle colour, two
14:06 layers and then my lightest colour, two layers and hopefully I'll have got to the top, if
14:12 I haven't got to the top by then I'll just carry on using my lighter layers and I'll
14:16 see you back in a minute when all of my tiles are on my turret.
14:22 We're going to put all the bits together now, already I've put this tower and turret onto
14:29 the bottom tier of the cake, this has got the dowel that goes through this one, so I've
14:34 already put that one on, I'm going to show you how to do this one now.
14:38 To make sure that it's secure, I'm just going to put a little bit of buttercream on the
14:46 top of the cake just to make sure that it sticks and dries on there.
14:51 Now you'll notice when I put this next one on it's got the pretty little, I never know
14:57 what they're called, the bits that go around the outside of the castle.
15:01 I've done that already because obviously once it's on it'll be really really hard to do
15:05 it afterwards.
15:06 So I'm going to put this one on but then I'm actually going to show you how to make it
15:10 right, the edging.
15:12 Right, ok so the next thing that I'm going to do is take this cake and lift it on and
15:21 just drop it onto the side of the cake, onto the top of the cake, right on the side of
15:26 this turret here.
15:27 If some buttercream comes off like it has there, just wipe it off, that's fine.
15:32 Good, and now we're going to take our tower and I'm going to show you now the importance
15:38 of this dowel that goes through the middle of it.
15:41 Another little bit of buttercream.
15:46 So this is going to go now in the middle, let me just check to make sure that that's
15:51 right.
15:52 Yep, it's looking spectacular already.
15:56 And now if you watch I'm just going to push the rest of this dowel all the way down, I
16:02 can feel it going through here, through this one and it's also going to go down and fix
16:09 itself through the bottom tier as well.
16:12 That's it.
16:14 Make sure you can't see it.
16:17 So now I've got myself a really sturdy cake.
16:23 So as you can see I've already done the edging here and I'm going to show you how to do that.
16:29 Put this cake to one side and here you can see I already have rolled out, again, about
16:35 four millimetres thick, a piece of sugar paste, the same colour as I've coloured on the cake.
16:42 And I've just left it just for a couple of minutes just because I want it to have a little
16:46 bit of a shell on it.
16:49 Now I'm going to cut this into equal widths.
16:55 Now you can use just a normal knife or a palette knife and cut into equal widths or if you
17:00 have one of these little gadgets, they're fantastic, it's actually called a multi-ribbon
17:04 cutter and if I show you what it does, basically you can, if you roll it along your sugar paste
17:11 it will give you exactly even strips of sugar paste so I don't have to worry about whether
17:21 they're all the same width or not because I know that they are.
17:24 Really clever little gadget.
17:26 So when I've got my evenly cut widths I then take my circle cutter, again which I've used
17:33 for the tiles, and I'm just going to, obviously at the same depth all along, I'm going to
17:40 just cut little half circles from the edge into the middle like so.
17:55 Really effective.
18:00 Now because obviously you're not going to be able to do these all in one great big long
18:03 one, you're going to have little joins but that doesn't matter because that's what the
18:06 ivy and the vines are all for, is to hide all those little joins.
18:10 So we're going to take our good old edible glue now and just on the top edge, around
18:17 the top of your cake, I like to start in the middle so that we know that we've got a nice
18:23 long uninterrupted run at the front.
18:26 I'm going to just paint with edible glue.
18:36 Cut the edges just to neaten them up and this is where leaving it to sit for about five
18:42 minutes helps because it's toughened up a little bit enough for me to be able to pick
18:47 it up and just place it along the edge.
18:57 Try and make it stand up as much as you can.
19:02 All around the edge.
19:07 Try and get it as even as you can.
19:14 Once you've done that one, then obviously we can go back, cut again and continue all
19:19 the way around until you've completed.
