How To Make A Princess Castle Cake - Part 1

00:00 Hi everyone, I'm making a princess castle cake today.
00:10 So let's get cracking.
00:12 OK, our first job is to cover the two cakes.
00:18 So I've already covered the bottom tier and I'm going to show you how to cover the middle
00:23 tier now.
00:24 So I've just put buttercream all over my cake and I'm going to put that to one side and
00:29 then take, now I've got this lovely pink, it's from Satina, it's the Satina Make and
00:37 it's such a lovely sugar paste to use.
00:40 It's almost, I always think it feels ready kneaded.
00:43 OK, so I've given it a little knead just to soften it up.
00:48 Just dusting of icing sugar and then we're going to roll out our sugar paste to, I would
01:01 say, about 5mm.
01:04 We want it quite thick because what we're going to do is we're going to score our brick
01:09 pattern into it.
01:10 So we don't want it too thin because if it's too thin it might go straight through into
01:16 our sponge and we don't want that.
01:19 This is a smoother, if you haven't got a smoother don't worry, you can just do this with your
01:22 hands but I'm just smoothing it over just to get a nice perfect finish and back in with
01:30 our sponge and then over the top lightly cover.
01:36 Give it a good old rub at the top just to make sure there's no air bubbles and then
01:43 cover all the way around the cake.
01:49 Now I shouldn't say this but don't worry too much about it's not perfect because remember
01:52 it's going to be covered in bricks anyway and your little girl is going to be so overwhelmed
02:00 by the design that I'm sure she won't be criticising how it's covered so we won't worry too much.
02:05 OK, if you do have a smoother do just give it a once over around the top and around the
02:11 sides just to try and get it as smooth as you possibly can.
02:16 There you go.
02:18 And then we need to put this on a turntable.
02:21 If you haven't got a turntable you could use a lazy susan if you've got one or something
02:25 like that but it's just quite good to have something that you can just turn whilst you're
02:30 cutting.
02:31 It just makes life that little bit easier.
02:36 OK, so just cut right round the bottom, take the excess off and then come down to the right
02:46 level and then with the turntable just go round with the back of a knife.
02:59 OK, so we want the blunt side of a knife because we're just scoring this, we're not cutting
03:04 it, we're just scoring horizontal lines to begin with all the way round.
03:15 Again, don't worry if they're not even because the whole overall effect is going to be so
03:23 spectacular that you won't notice these differences.
03:26 OK, and now just to finish off your vertical bricks, let's do round the bottom first.
03:39 You can see where I've sort of cut the bottom a little bit uneven there.
03:43 Don't worry about it because as soon as it goes on our cake that's where we'll be covering
03:47 up with all of our flowers etc. so don't worry too much if you can see the sponge through
03:52 there because that can be sorted out later on.
03:55 And now the next level, obviously we're doing alternate patterns to get that brick design.
04:12 And there we have one of our tears.
04:17 Now onto our towers, this is really clever, I've baked in a tin, as you can see, just
04:23 a normal tin if you've got some baked beans or some tomato soup or whatever, always keep
04:28 your tins because you can line them, just line them normally like you'd line a normal
04:33 tin.
04:34 I always put about two thirds up of cake mix and bake them.
04:41 And the thing is, is about these new tin openers or you know the pool cans, is that you've
04:45 still got your little lip there but it really doesn't matter, all it means is that you just
04:49 have to ease it out a little bit more but they come out absolutely perfectly, this is
04:54 what I've got here and it is the perfect height for one of our towers.
04:59 Again I've covered it in buttercream, if you put your buttercream on and then you go off
05:04 and do something else, you come back, sometimes it's crusted over so all you really need to
05:08 do is just scuff it up, you know if you scuff up your buttercream like this just to make
05:12 it sticky again because there's nothing worse than coming back wanting to cover it in sugar
05:17 paste and it's not going to stick.
05:20 So that's what I'm doing, just scuffing it, making sure it's sticky again.
05:24 Now you'll notice that I've got some sugar paste rolled out already, this is obviously
05:30 to cover the tower, we do this a bit differently, we sort of roll it over it but it's really
05:36 quite handy to have a piece of ribbon just so that we can just measure, so I measure
05:42 down, that's just about big enough, that's good and then I need to measure the circumference
05:48 like so, brilliant.
05:53 So I've got enough there because what I actually do this time, it's a little bit different,
05:58 I'm going to score it first and the reason I do that is because it's so tall but so thin
06:04 if I keep going scoring round sometimes you can get really really wobbly bricks so I'm
06:09 going to score it first, so I'm going to take a normal kitchen knife and I'm going to turn
06:16 it over to the blunt side and remember like I did before, I'm going to score horizontally,
06:26 try and sort of get it the same distance apart that your other two cakes were, just so that
06:33 it sort of looks the same but again don't worry too much about it and then do your scoring
06:41 again.
06:54 There we go, so we've scored all our bricks in, let me just double check just again just
06:58 to make sure that I know, I lay that down there like that, now always cut it a little
07:04 bit longer, that's about right, there we go, take all those away and now I'm going to turn
07:30 this upside down and then take my tower like so, and then gently evenly roll it round,
07:51 now the reason that we score beforehand, we can get away with scoring it is because it's
07:55 only small and the weight of it is not going to take away that indentation of the brick
08:01 and as you can see, so much easier to do that, that's it, little bit of water just to seal
08:13 this part here, don't worry about this because that's the part that will be against the upper
08:18 tiers so we won't worry too much about that, I'm just going to cut just a little bit off
08:24 the top, there's a little bit too much there but leave a lip because I quite like to tuck
08:31 it over the top just to neaten it up, obviously our turret is going to go on the top but it
08:36 does look better if it has got a little bit tucked in, ok, so that's one of our towers
08:42 done, I'm going to go and get busy doing the other one and I'll be back in a sec.
08:47 So into a ball, everything starts with a ball and then what I'm going to do is I'm going
08:54 to just, however you want to do it, whether you want to roll in your hands like this or
08:58 whether you want to pinch up like this or whether you want to roll it along your work
09:02 board like this, what we're obviously trying to get is a turret so the first thing we need
09:09 to do is to make sure that we've got a nice steady and wide enough base so keep checking
09:16 it against the top of your tower, the other thing we need to do is to make sure that it
09:22 matches our other one to a certain degree, ok so that one's a little bit smaller but
09:29 I'm just going to take the top off there just so that they do match again, but don't worry
09:35 if it's got any cracks in it or whatever because obviously you're not going to see them so
09:39 that doesn't matter and I think that that's probably about the right size, the right height
09:49 and it pretty much matches my other one, ok so what's really important now is these are
09:56 plastic dowels, now you can do it without but I really like to use plastic dowels, you
10:01 can buy these from Cake Craft World and they're usually used in stacked cakes or wedding cakes
10:07 or whatever just to keep everything very steady and the reason I like to use this is because
10:12 we're dealing with height here so this is going to go down into the middle of our tower
10:17 and it's also going to continue down through our turret just to keep it all together so
10:24 I'm not actually going to pierce it all the way through here but what I do want to do
10:28 is I just want to make a mark just to show the centre like so, ok of my turret so I've
10:39 made a mark like that and then I'm going to leave those just to set just for a little
10:45 bit about 10 minutes and then we're going to come back and we're going to put them all
10:49 back together again.
10:52 Ok welcome back as you can see I've been busy rolling out some sugar paste here, what I've
10:57 done is I've taken the pale pink and I've added some food paste colour, this is a baby
11:06 pink colour to make a darker pink and I've also added some white to this colour to make
11:12 a paler pink so I've got three different pinks, I've got the original pink, I've got a darker
11:16 pink and I've got a paler pink and that's going to make up our tiles on our turret but
11:22 you can have as many different shades as you want or you can just have them all one colour,
11:26 it's totally up to you.
11:28 So now I've got some edible glue here, ok so edible glue, you can use water but sometimes
11:34 it's not really sticky enough so I would use edible glue if I were you, with a paintbrush
11:39 and I'm just going to put quite a generous amount of edible glue around the top of my
11:45 tower and then take one of my turrets, now do you remember I said earlier that we've
11:51 put a hole in the middle here, ok the reason we've done that is because my dowel is going
11:56 to go down into the centre of my tower and then now I can see the middle of my turret
12:06 and now I'm going to gently feed that through, try and get it so that it comes out of the
12:10 point but again if it's not directly in the middle don't fret, ok and down into the middle
12:21 like that.
12:22 So now can you see how handy it is to have this dowel in the middle because it's completely
12:27 sturdy and I can start working on it.
12:30 So I've rolled out my sugar paste, again quite thick, probably to about 4-5mm thick and I've
12:37 got this little metal round cutter, circle cutter, again you can use this any size, you
12:43 could use a heart shape cutter, you can use any cutter you like but I've just cut out
12:48 lots and lots of different ones and then I'm going to just put a layer of glue around the
12:56 bottom, I'm going to take my darkest colour, it does usually look better if you use the
13:00 darkest one at the bottom, I'm going to hold my dowel to steady myself and can you see
13:09 I'm just going round, don't worry about pushing to secure your tiles at the top because when
13:20 you do your second layer you will slightly cover obviously the first ones.
13:30 Ok, that's the first layer, now because I'm only using three different colours I'm going
13:41 to do two layers of the same colour, so I'm just going to show you how to do two, I'm
13:47 sure you don't want to sit and watch me do all of them but I'm just going to show you
13:50 how to put the second layer on, so again I'm going to alternate it so this one is going
13:55 in between the bottom layer and again this one in between and slightly overlapping all
14:08 the way around and then continue up so now I will be using my middle colour, two layers
14:17 and then my lightest colour, two layers and hopefully I'll have got to the top, if I haven't
14:22 got to the top by then I'll just carry on using my lighter layers and I'll see you back
14:27 in a minute when all of my tiles are on my turret.
14:32 We're going to put all the bits together now, already I've put this tower and turret onto
14:39 the bottom tier of the cake, this has got the dowel that goes through this one, so I've
14:44 already put that one on, I'm going to show you how to do this one now.
14:48 To make sure that it's secure, I'm just going to put a little bit of buttercream on the
14:56 top of the cake just to make sure that it sticks and dries on there.
15:01 Now you'll notice when I put this next one on it's got the pretty little, I never know
15:06 what they're called, the bits that go around the outside of the castle.
15:11 I've done that already because obviously once it's on it will be really hard to do it afterwards
15:16 so I'm going to put this one on but then I'm actually going to show you how to make the
15:21 edging.
15:22 Right, ok, so the next thing that I'm going to do is take this cake and lift it on and
15:30 just drop it onto the side of the cake, onto the top of the cake, right on the side of
15:36 this turret here.
15:37 If some buttercream comes off like it has there, just wipe it off, that's fine.
15:43 And now we're going to take our tower and I'm going to show you now the importance of
15:48 this dowel that goes through the middle of it.
15:51 Another little bit of buttercream.
15:55 So this is going to go now in the middle.
15:58 Let me just check to make sure that that's right.
16:02 Yep, it's looking spectacular already.
16:06 And now if you watch, I'm just going to push the rest of this dowel all the way down.
16:12 I can feel it going through here, through this one and it's also going to go down and
16:19 fix itself through the bottom tier as well.
16:22 That's it.
16:24 Make sure you can't see it.
16:27 So now I've got myself a really sturdy cake.
16:33 So as you can see, I've already done the edging here and I'm going to show you how to do that.
16:39 Put this cake to one side and here you can see I already have rolled out, again, about
16:45 four millimetres thick, a piece of sugar paste, the same colour as I've coloured on the cake.
16:52 And I've just left it just for a couple of minutes, just because I want it to have a
16:56 little bit of a shell on it.
16:59 Now I'm going to cut this into equal widths.
17:05 Now you can use just a normal knife or a palette knife and cut into equal widths or if you
17:10 have one of these little gadgets, they're fantastic, it's actually called a multi-ribbon
17:14 cutter and if I show you what it does, basically you can, if you roll it along your sugar paste,
17:21 it will give you exactly even strips of sugar paste.
17:29 So I don't have to worry about whether they're all the same width or not because I know that
17:33 they are, really clever little gadget.
17:36 So when I've got my evenly cut widths, I then take my circle cutter, again which I've used
17:43 for the tiles, and I'm just going to, obviously at the same depth all along, I'm going to
17:50 just cut little half circles from the edge into the middle, like so.
18:05 Really effective.
18:10 Now because obviously you're not going to be able to do these all in one great big long
18:13 one, you're going to have little joins but that doesn't matter because that's what the
18:16 ivy and the vines are all for, is to hide all those little joins.
18:20 So we're going to take our good old edible glue now and just on the top edge, around
18:27 the top of your cake, I like to start in the middle so that we know that we've got a nice
18:33 long uninterrupted run at the front.
18:36 I'm going to just paint with edible glue.
18:46 Cut the edges, just to neaten them up.
18:49 And this is where leaving it to sit for about five minutes helps because it's toughened
18:54 up a little bit, enough for me to be able to pick it up and just place it along the
19:06 edge.
19:07 Try and make it stand up as much as you can.
19:12 All around the edge.
19:17 Try and get it as even as you can.
19:24 Once you've done that one, then obviously we can go back, cut again and continue all
19:29 the way around until you've completed.
19:32 And there you have it.
19:33 A beautiful cake.
