00:00 Hi everybody, I'm Lori Gelman and we're having a block party.
00:10 Make that a building block party.
00:12 So grab some hard hats and lots of colorful blocks and let your kids turn your dining
00:16 room into a construction site.
00:18 Just make sure they don't try to build with these blocks because these are the cakes.
00:22 Now all we need is a little help from our friend, Leve Hansen, for the Betty Crocker
00:25 Kitchens.
00:26 Hey Leve.
00:27 Hi Lori.
00:28 So we're going to make some building but where's your hard hat?
00:30 No hat needed.
00:31 Really?
00:32 No.
00:33 Okay.
00:34 This is nice soft cake.
00:35 Okay.
00:36 But it looks fantastic.
00:37 So we're going to make some building blocks and you start with a 13 by 9 inch cake and
00:40 you want to make them level.
00:41 So we're going to trim off the dome and we can set that aside because we're not going
00:47 to need it anymore.
00:50 And then we're going to flip it over because this is the baked side and there's not as
00:54 many crumbs on it so when you go to frost it, it's going to be a lot easier.
00:57 Okay.
00:58 We're not going to do a crumb coat though, right?
00:59 We are going to do a crumb coat.
01:00 Okay.
01:01 Now you're going to have blocks of different sizes so what I recommend is cutting it into
01:03 three equal sized strips and then some blocks are square so you just can cut one of them
01:09 in half.
01:10 Okay.
01:11 So Lori, if you pass me that plate, I'll show you how to do a crumb coat.
01:13 You bet.
01:14 Now we should mention that you chilled this cake after you baked it for about half an
01:18 hour, right?
01:19 Yeah.
01:20 That'll firm up the cake and that way you'll have less crumbs also.
01:22 Okay.
01:23 Okay.
01:24 So you're going to take some blue frosting and spread a nice thin layer on top and it
01:32 can extend over the sides a little bit.
01:35 And why do you crumb coat anyway?
01:37 A crumb coat is basically just a thin layer of frosting that seals in all of the crumbs
01:42 because if you went ahead and you have all these cut sides, they tend to crumb up a lot
01:46 so when you apply your frosting, you get crumbs in it.
01:49 So you don't have to be too fancy with the crumb coat.
01:51 Now as smooth as you can get it, the better.
01:55 Well I came in early this morning and I crumb coated one for you so we can just swap.
01:59 Thank you.
02:00 Okay, so now we'll do our final coat.
02:03 Great.
02:04 Okay.
02:05 These colors are so great that you have.
02:07 Well, to get really vibrant colors, you can use gel colors.
02:10 It's a more concentrated color than the liquid ones that you can get in the grocery store.
02:15 So what I did is I applied some frosting to the top and then I'm going to go around and
02:19 finish the sides and that will create a little lip around the top.
02:24 Okay, so now this lip is formed and I'm just going to come in and scrape it off towards
02:30 the center of the cake.
02:31 You're using your offset spatula but you can use a knife.
02:34 So now we have to build the little connectors and we're going to do it with marshmallows.
02:41 Oh, second to cake, my favorite thing in the world.
02:44 Well, as you well know then, marshmallows are a little sticky.
02:47 So a great trick is to use scissors that have been sprayed with non-stick cooking spray.
02:51 And they just cut right through like butter.
02:55 So now we're going to frost them.
02:57 Just insert a fork into the side and then you take your little offset spatula.
03:02 Okay, I have that.
03:03 Put a little frosting on top and then you go around the sides and you just move the
03:11 fork around as needed.
03:13 And there's going to be a little spot that you don't get but we'll fix that once we get
03:16 on the cake.
03:17 And then once you have it frosted, you just slip it onto the cake and then you can just
03:22 touch it up a little bit in the spots that you might have missed.
03:26 Okay, and then we'll have four on this side.
03:30 How's this?
03:31 That looks right.
03:32 You want to put it all the way down.
03:33 Okay.
03:34 There you go.
03:35 And now nudge it off.
03:36 Great.
03:37 Okay.
03:38 Excellent.
03:39 All right, I'm ready.
03:40 Okay.
03:41 You ready?
03:42 Yes.
03:43 Okay, so you just touch it down and then push it off.
03:46 Great.
03:47 That really looks great.
03:51 Are we going to put it on with the rest of it?
03:53 That's a great idea.
03:54 Okay.
03:55 Okay.
03:56 So I just slip a big spatula underneath.
03:58 And then put it down.
04:01 I'll take my little spatula just to nudge it off.
04:05 Ta-da!
04:06 This looks so great.
04:07 Anybody would love to have this at their party.
04:09 Thanks Leigh.
04:10 Thanks Lori.
