00:04 - Welcome to a butterfly birthday party.
00:08 A sure winner for a girl's special day.
00:10 Hi, I'm Lori Gelman, and this is Liev Hansen
00:12 from the Betty Crocker Kitchens.
00:13 - Hi, Lori. - Hi.
00:14 Liev is gonna show us how to transform a plain cake
00:17 into a gorgeous butterfly cake.
00:18 Can't wait.
00:19 - Okay, well we're gonna start with a nine inch round cake,
00:22 and we're gonna cut off the dome.
00:24 And you'll see why I'm gonna do that.
00:26 Okay, you wanna take that?
00:29 - Sure. - And what I'm gonna do
00:31 is I'm gonna flip it over.
00:33 The first step is to just cut right down the middle.
00:35 And then we're gonna sort of form a peace sign.
00:39 We're gonna cut about here to here,
00:41 and if you need, you can use little toothpicks
00:43 to mark where you wanna cut.
00:45 - Oh, that's a good idea. - Yeah.
00:47 And then we're just gonna use as a guideline.
00:50 - That's actually a great tip.
00:57 - There you go.
00:58 - Especially if you don't feel comfortable eyeballing it.
00:59 - Exactly.
01:00 So now we're just gonna flip these over,
01:03 and maybe rotate them.
01:05 And you're gonna have like a little butterfly's wings.
01:08 - Very pretty.
01:09 - Okay, so now we're gonna move into the crumb coat.
01:11 A crumb coat is basically just a thin layer of frosting
01:13 that you spread over the entire cake,
01:15 and that seals in your crumbs.
01:16 - Looks good. - Great.
01:18 So we're just gonna start spreading it on.
01:20 I like to put a nice big dollop on top.
01:23 So what I like to do is I like to get a nice,
01:26 thick coat of icing on.
01:28 - How thick?
01:30 - Maybe about a quarter inch.
01:31 And then, once I have that, then I can start smoothing out.
01:33 Just wanna make sure everything is covered.
01:36 And each time I lift up my spatula,
01:37 it's a good idea to scrape it off.
01:39 That way you'll get cleaner lines.
01:41 - I notice you also have hot water over there
01:43 that you keep dipping your spatula in.
01:44 - Yep, you can dip your spatula in.
01:46 Just make sure you dry it off.
01:48 The hot water will melt the frosting.
01:51 - So while you're spreading, I notice you put a lot on,
01:53 but then you're scraping it off.
01:53 - Exactly.
01:54 It gives you a little more leeway
01:55 so that you don't actually hit the cake
01:57 and the crumb coat while you're frosting it.
01:59 And if you want this cake to be bigger
02:04 and you want it to serve more people,
02:06 you can always layer two cakes on top of each other.
02:09 - Great idea.
02:10 Would you have to cut the layers together
02:12 so that the pieces fit exactly on top?
02:14 - Yeah, what I would do is I would actually take one cake,
02:17 put a little frosting on it, spread it evenly,
02:19 and then place the other cake on top,
02:20 and then cut out the shape that you want.
02:22 - So it's stuck together.
02:23 - Yes.
02:25 - You do the sides first, and then you smooth out the top.
02:28 - Yeah, I put icing on all over, then I do the sides,
02:31 and that creates this little lip of frosting here,
02:34 and then I can just slice it off
02:37 and get a nice, smooth finish.
02:40 So it looks like we're about ready
02:42 to start doing some more decorating on it,
02:43 and this is the part you're gonna help me with.
02:45 - Okay, good.
02:46 - Okay, so let me move this out of the way.
02:49 Now you'll see here that we have some pastry cones.
02:52 - Great.
02:53 - And we've actually pre-tinted some frosting.
02:55 I have a green, a yellow, and a pink.
02:57 - Just basic food coloring?
02:59 - Basic food coloring,
02:59 and you can get these at the grocery store.
03:01 Now what I'm gonna do is we're gonna create
03:03 the pattern on the butterfly.
03:04 I'm gonna squeeze some frosting,
03:07 and then I'm gonna take my spatula,
03:10 heat it up in this hot water,
03:12 and I'm gonna take it and just spread it towards the center.
03:17 Now, I'll help you do this.
03:19 I'll put some pink on here,
03:21 and I want you to get your spatula
03:22 and put it in the hot water,
03:24 and you can help me spread this.
03:25 - Like this?
03:29 - Yes, just push down and spread.
03:31 Great.
03:31 So we're gonna do a yellow also,
03:33 so I can clean off your spatula.
03:34 - I'm ready.
03:34 - A little teamwork here.
03:36 We'll get this done fast.
03:38 Great.
03:41 If you want it to trail down
03:42 and make more of a pointed shape,
03:44 you could bring it down,
03:45 and also, as the icing gets thinned out,
03:49 it gets a little transparent,
03:50 so you can get a little variegated or shaded effect.
03:54 Great, and then just that one.
03:56 And if you want, you can always come back
03:58 and just accent it a little bit,
04:00 and maybe just to accent that shape,
04:04 you can come down just for a little wow.
04:09 - There's a technique to piping, though, isn't there?
04:11 - Yeah, actually, what you're gonna do is,
04:13 especially if you're right-handed,
04:14 you're gonna hold the bag in your right hand
04:15 and squeeze at the top.
04:16 If you're left, you hold it in your left hand
04:18 and squeeze at the top,
04:19 and then, with your other hand, you guide.
04:21 Now, you don't wanna squeeze in the middle,
04:23 'cause then sometimes the icing can come out the back,
04:25 and you also have less control.
04:26 Now, just for a little more added decoration,
04:32 we can actually put little candies on,
04:35 and maybe we'll put the--
04:36 - These coated almonds?
04:37 - They are.
04:38 So we can just do something like that
04:40 to add a little bit more--
04:41 - Oh, just to put the different color.
04:42 Okay, so you put the pink on the green,
04:45 or you could do whatever way you want, but I guess--
04:46 - And you can use any color palette.
04:48 You don't have to stick to this.
04:49 You can use blues and purples,
04:51 whatever kind of butterfly you wanna make.
04:53 - There we go.
04:54 - Okay, and then we have little candy sticks for the body.
04:57 - Oh, nice.
04:59 - And the final step is, if you want it to really glisten,
05:02 we have some sanding sugar. - Of course we do.
05:04 Sanding sugar is basically just a coarse sugar.
05:07 - And you can just sprinkle it on top,
05:08 and it'll give it a little sparkle.
05:11 - And you can get it at the store?
05:12 - You can get these at the store, yep.
05:14 They come in colors, too,
05:15 so if you wanted to add a little bit more vibrancy,
05:16 you can get a pink or a green.
05:18 - Oh, pretty.
05:19 - Okay, and there's your butterfly.
05:21 - That is a gorgeous butterfly.
