00:03 drop by China Blue to try award-winning chef Jeremy Leung's special set menu

00:10 The Hong Kong-born chef uses techniques and ingredients
00:13 from different parts of China, and we were blown away by every course.
00:17 We were first served two appetizers in a plate,
00:19 lobster marinated in coriander lime jelly that's zingy and tangy
00:23 and deep-fried kataifi with a stuffing of seafood otak-otak.
00:27 Next is soup.
00:28 This was super earthy thanks to matsutake mushrooms
00:31 and double-boiled mary fruit, a local fruit from Guangdong.
00:34 It also had peach gum, sea cucumber, dry moon clam,
00:37 and a black chicken dumpling for a mix of taste and textures.
00:41 First, sea garupa that chef Jeremy salts for a couple of hours
00:45 to make it meatier in texture,
00:46 then steams with sun-dried ginger, red chili, which was surprisingly subtle,
00:50 black bean paste, and superior chicken stock we'd slurp by the bowl if we could.
00:55 The star of the set is the slow-cooked beef made with boneless short ribs.
00:59 This was super smoky in aroma and insanely tender.

01:07 It ain't an Asian meal without rice,
01:09 and ours had black sesame, dried scallops, spring onions, and egg white pearl.
01:13 To close the meal, they served hawthorn ice cream,
01:16 yup, that's the stuff hawflicks are made of,
01:18 with Chinese sweet vinegar caramel and an onion pancake for a savory contrast.
