00:00 Let's make the most of those end of the summer tomatoes
00:02 by making sun-dried tomatoes in the oven.
00:05 But be prepared, this recipe is gonna take all day.
00:08 So you wanna find the ripest tomatoes you can.
00:11 We're trying to get rid of all the moisture
00:13 from our tomato, so you wanna start
00:15 with a less juicy tomato, like a Roma.
00:17 We'll start by cutting them in half
00:19 and removing the seeds.
00:20 You wanna get rid of your seeds.
00:22 I like to bring a little knife, a small paring knife,
00:24 and kinda cut that center out,
00:26 and then just kinda scoop out the seeds.
00:29 I think they look better without the light colored flesh.
00:31 This is the perfect thing to do
00:33 towards the end of the summer
00:34 when the tomatoes are the ripest and the juiciest.
00:38 The flavor of these that you do yourself
00:41 are gonna be way superior to that
00:44 that you get in the dried bag in the produce aisle.
00:48 I'll show you my favorite way to serve them at the end.
00:50 Just sprinkle lightly with salt.
00:52 The salt is not only gonna add in a little flavor,
00:55 but it's also gonna help draw out that extra moisture
00:57 to get these nice and dry.
00:58 The trick here is we're gonna cook these
01:00 low and slow in the oven.
01:02 Many hours later, we have sun-dried tomatoes.
01:05 It almost smells like pizza sauce, like fresh pizza sauce.
01:09 There's dozens and dozens of ways
01:12 to serve sun-dried tomatoes.
01:14 I can't wait that long, so I'm showing you
01:16 the simple way to create a perfect bite
01:19 with a sun-dried tomato.
01:20 Get you some good crusty bread, toast it up,
01:23 a little herby cheese spread,
01:25 some fresh basil, sun-dried tomatoes.
01:29 Little drizzle of the EVO, and some cracked pepper.
01:32 Little flaky salt, perfect bites.
01:35 Mm, mm!
01:38 Sometimes when you get sun-dried tomatoes
01:41 that are still dry, it's like biting
01:44 like beef jerky or something.
01:46 These are nice and tender, sweet,
01:49 yet a little bit salty, perfect.
01:51 If you go through the process of making sun-dried tomatoes,
01:54 you're gonna make a large amount.
01:57 So how do you save 'em?
01:58 You could keep these stored in a Ziploc bag
02:00 and then just keep them in your fridge for a while
02:03 or your freezer.
02:04 They also can stay nice and preserved in olive oil,
02:06 so I like to pack 'em inside a jar.
02:09 Couple little cloves of garlic, just to add in some flavor,
02:13 and then just cover them with olive oil.
02:15 Not only are the tomatoes gonna be just super rich,
02:18 but once you're done, that oil is gonna be
02:20 sun-dried tomato flavored, and that will be great
02:22 to add to salad dressings or to finish off a soup.
02:25 Furthermore, if you find yourself with just a ton
02:28 of tomatoes at the end of the summer,
02:30 go ahead and do this.
02:31 You can put 'em up in cans and save 'em
02:33 for the holidays as gifts.
02:34 A tiny bit of effort for one day,
02:36 you've got these gems to last you for a long time.
