2 tbsp Olive Oil

½ Chicken (washed & pat dried)
¼ cup White Wine
½ cup Chicken Stock

00:00 Today I'm going to show you a very quick simple recipe called Chicken Diawala.
00:05 Now this literally translates to Hell Fire,
00:10 where you have grilled meat.
00:11 It's quite a whimsical term, but trust me that's what it is.
00:14 A devil's chicken, literally the word comes from the fireiness,
00:19 the heat in the recipe.
00:20 Let's begin.
00:28 Now while they say this is a fiery recipe and things like that,
00:32 trust me, for an Indian palate or for an Asian palate,
00:35 typically, this is not really spicy.
00:37 Well for the European palate of course this is spicy,
00:39 because this has Cayenne Pepper, this has Chilli Flakes,
00:42 it has Black Pepper Powder.
00:44 But trust me, it's moderate, it's not really as devilish as it may sound.
00:49 In a marination bowl, Olive Oil of very good quality.
00:52 Adding in crushed Garlic.
00:54 To this, I'm going to add in Sweet Paprika.
00:58 Chilli Flakes for the devilish spicy taste in this recipe.
01:03 Freshly cracked Black Pepper.
01:06 Now for this very typically, I'm using a combination of mixed herbs.
01:12 Now the herbs that are generally used for a devil's chicken are,
01:16 Oregano, Thyme, Basil, Sage, Rosemary.
01:20 A combination of all of that in the choice that you like or you prefer.
01:24 Well they call it like a secret spice mix or a secret herb mix or a secret flavouring.
01:29 But trust me, you can go by just one herb and flavour it to your family preference.
01:35 Time to add in Salt.
01:39 Remembering the fact that there's going to be Chicken Stock used in this recipe,
01:44 a little later for cooking, so do not get confused,
01:48 because initially you may see a lot of liquid in the pan.
01:51 But eventually when the devil's chicken or the Diavola gets ready,
01:55 you'll realise that all the stock, all the wine gets evaporated.
01:59 What eventually you'll be left with in the pan is a beautifully roasted chicken.
02:03 So Salt according to the roast chicken.
02:06 Lemon Juice.
02:08 Ensure you collect all the seeds, no surprises in your mouth.
02:12 Let's mix this well.
02:14 And that is your marination for the devil's chicken.
02:21 In goes half a chicken.
02:22 Now this is chicken with its skin on.
02:25 You wash it nicely and you pat it dry completely.
02:28 And then you roll it into the marination.
02:31 Once the chicken is marinated, now there are two ways you can treat the chicken.
02:47 The first one is to bake this like traditionally we would want to bake this recipe.
02:53 If you have your ovens, whack them at 200 degrees Celsius.
02:56 Add in Chicken Stock and White Wine to the baking dish.
03:00 Place the chicken on top of that and bake it for at least 40 minutes.
03:04 Now in case you think your oven is just working perfect and 30 minutes is well,
03:09 that's about it.
03:10 The next method is to use a wok.
03:13 Now because I'm doing this entire process in a wok,
03:16 I'm going to straight place the chicken in the wok.
03:19 And here the idea is to pan sear this before we add in the rest of the ingredients.
03:25 Once the chicken is flipped again,
03:38 we'll very carefully lower the flame and add in White Wine.
03:44 And along with this Chicken Stock.
03:47 We give this a quick swirl.
03:53 Increase the flame of course.
03:56 Cover this and cook this undisturbed for 15 minutes.
04:00 It's been 15 minutes, let's have a quick check.
04:06 At this point in time, the water, the stock, the moisture
04:13 has almost dried out.
04:15 And that's exactly what you're looking at.
04:18 Let's roll the chicken in this little gravy that you have.
04:22 It's almost like a Panju or a sauce or Juice as we call it.
04:28 At this stage, we'll lower the flame and add in the remaining stock,
04:33 if any, you can add in some more as well.
04:36 And allow this to now cook on low flame for at least 15 minutes.
04:42 A total of 30 minutes cooking time is just about perfect for half a chicken.
04:47 With this Chicken Diavola or Devil's Chicken or literally Hellfire's Chicken
05:01 is done and ready.
05:02 Make this for your family, make this for your friends.
05:03 Serve this with a bowl of steaming mashed potatoes,
05:07 some grilled vegetables, some steamed vegetables.
