00:12 Recipes for the day, Paneer Matar, Aloo Methi,
00:16 And the third one, Bhindi Masala.
00:18 All three restaurant style, under 5 minutes.
00:21 Let's begin.
00:22 To the ones who do not have a prelude to what this is,
00:29 Well, this is my version of a universal gravy.
00:32 Universal gravy is basically an all-purpose gravy with onions, tomatoes,
00:35 And lots of spices and things like that.
00:37 It's a ready to use or ready to consume gravy.
00:40 All you now need are a couple of vegetables,
00:43 And this gravy, and that's about it.

00:58 First things first, I'm going to take a little oil,
01:00 In all the three pans, because I'm going to cook simultaneously,
01:03 Because I just want to show and prove,
01:05 That all of this can literally and actually happen under 5 minutes,
01:09 Simultaneously, without any headache.
01:11 Let's begin with Bhindi.
01:13 Moving on to Potatoes.
01:15 And lastly, Paneer.
01:16 A touch of salt in all three.
01:18 Beginning with Ladyfinger.
01:20 Moving on to Potatoes.
01:21 And finally, Cottage Cheese.
01:24 A touch of Amchur or Chaat Masala on the Bhindi,
01:42 To ensure that it does not get sticky.
01:44 To the Paneer, let's add in Green Peas,
01:56 Which are boiled and kept ready.
01:57 And give this a quick stir.
01:59 A touch of Black Pepper in all three.
02:05 The Bhindi, the Potatoes, and the Paneer-Matar mixture,
02:19 Are all cooked and ready.
02:21 Time to add in our star, and that is our Universal Gravy.
02:30 A touch of water in the Aloo Sabzi,
02:33 And the Paneer-Matar.
02:35 And while the Aloo is getting cooked,
02:37 Let's not forget Kasuri Methi as well,
02:40 Because the recipe name, if you remember, is Aloo Methi.
02:43 Allow all of this to now start roll boiling,
02:46 And then we just check for salt.
02:59 Aloo Methi is done and ready.
03:01 It's got that nice shine, because the starch from the Aloo of course,
03:04 Has kind of released, it's also ended thickening up,
03:07 Because of that.
03:08 And it also has a little more oil, compared to these two vegetables.
03:11 And that's why the shine, the glaze, the sheen,
03:13 Is very different and very interesting.
03:15 With this off goes that flame.
03:17 This is almost like a softer version of a Makhani.
03:21 Lovely, perfect.
03:23 It of course has no butter, no cream,
03:24 As of now if you want, we can add some.
03:26 In fact, what are we waiting for?
03:28 Let's add some.
03:30 And the Bhindi, of course, it's almost like a masala,
03:33 Which would go very well with Naan or Roti or Parathas,
03:36 Or Chapatis or Puris for all you care.
03:38 With this, now if you realize and notice,
03:40 I've just added some extra salt,
03:42 Because that's pertaining to the vegetable and the core ingredient.
03:45 And to the Bhindi, to take care of the stickiness,
03:48 I've added Chaat Masala or Amchur.
03:50 With this, ladies and gentlemen,
03:51 You know, the best way to make a Bhindi is to add some Amchur.
03:55 And I'm going to add some Amchur to this.
03:57 So, I'm going to add some Amchur to this.
03:59 And I'm going to add some Chaat Masala or Amchur.
04:02 With this, ladies and gentlemen,
04:04 Universal gravy put to use 3 ways.
