Ingredients (20 pieces):
1 boneless, skinless chicken breast
1 tablespoon cooking oil
1 chicken bouillon cube
1 dl (1/2 cup) water
150 g (ca 5 ounces) cream cheese
0,5 dl (1/4 cup) chopped fresh parsley
0,5 dl (1/4 cup) chopped fresh chive
1/2 orange paprika
1/4 teaspoon black pepper
1/4 teaspoon salt
20 crostinis (homemade or from the store)
Recipe:
Season the chicken with salt and pepper
Cook the chicken in 1 tablespoon cooking oil 2-3 min per side
Add 1 dl (1/2 cup) water
Add 1 chicken bouillon cube
Bring to a boil
Lower the heat, put the lid on and let simmer for 10 min until the temperature of chicken is 75° C (165° F)
Let chicken cool down completely and cut into thin slices
Chop the slices finely
Put the chopped chicken into a bowl
Add 150 g (5 ounces) cream cheese and mix well
Add 0,5 dl (1/4 cup) chopped fresh parsley
Add 0,5 dl (1/4 cup) chopped fresh chive
Add 1/4 teaspoon salt
Add 1/4 teaspoon black pepper
Mix well
Cut off the stem at the base of the paprika
Cut the paprika in half lengthwise
Remove the seeds and core of the paprika
Cut the paprika into thin strips
Cut off the white membrane
Chop the paprika trips finely
Spread the chicken and cream cheese mash on crostini bread
Sprinkle the choped paprika over the crostini
Serve the crostini decorated with the parsley leaves
