We visit City of Glasgow College to speak to Gary Mackay, teacher and executive chef, on the recipes in his latest book and preparing for Saint Andrew’s Day.

00:02 - St. Andrew's is one of the big Scottish celebrations
00:05 that I don't think we celebrate enough.
00:08 We kind of get lost between Halloween and Christmas,
00:11 but we should celebrate it, I think, more.
00:16 And you are looking at kind of traditional stuff.
00:20 It's almost a replication of buns.
00:23 It's the same sort of food.
00:25 But I think for me, it's just having,
00:27 recognising that night as something special.
00:31 I'm actually doing the Lord Provost's
00:35 Charity St. Andrew's Dinner at the City Chambers.
00:39 So we're going to bring along some of the students
00:41 and just give them an amazing experience.
00:44 And we're going on that menu
00:45 and try to get as much Scottish produce as possible.
00:48 So for the starter,
00:50 I'm going to do our broth smokies and brown crab.
00:53 So some excellent big, big flavours.
00:56 And I'm actually going to do that
00:58 with a tikka masala mayonnaise.
01:01 So we're getting a little bit
01:02 of Glasgow's very own curry in there.
01:05 Main course is going to be Scotch beef.
01:07 And then I'm doing a lovely gin
01:10 and chocolate tart for dessert.
01:12 So, and all of these recipes are in my new book.
