1 kg Bitter Gourd
1 tsp Salt
3 tbsp Oil
¼ tsp Mustard Seeds
¼ tsp Cumin Seeds
¼ tsp Asafoetida
¼ cup Cashew Nuts
2 tbsp Sesame Seeds
A pinch of Turmeric Powder
1 tsp Coriander & Cumin Seed Powder
½ tsp Red Chili Powder
¼ tsp Garam Masala Powder
Salt (as per taste)
2 tbsp Powdered Sugar
Coriander Leaves (chopped)

00:00 Today I have a Gujarati Shaak for you, and it's one of my favourites.
00:04 And we make sure whenever there's a family event,
00:06 we have to have it on the menu.
00:08 So let's see the recipe for Kaju Karela.
00:11 I have some Karelas or Bitter Gourd here.
00:15 And now I'm going to show you how to clean it and chop it.
00:18 So take a peeler, or a knife is fine as well.
00:21 And start peeling the Karela.
00:28 Just get rid of the pointy part of the skin.
00:31 And now, I'm going to cut it into half.
00:37 And scoop out the centre.
00:39 If you're using baby Karelas, you can even use the seeds as well.
00:45 But I prefer to remove them.
00:47 And now you can cut them into round rings.
00:51 Get rid of the edge.
00:53 Add a tsp of Salt.
00:57 And nicely rub it over the Karelas and let it rest for 30 minutes.
01:02 Give these rings a thorough wash.
01:06 The Karela has been resting for 30 minutes.
01:09 And now I'm going to squeeze out all the water.
01:12 This helps in removing the bitterness.
01:14 Take some and squeeze out all the water.
01:19 Squeeze it thoroughly.
01:22 Separate them out.
01:24 And keep them in another bowl.
01:26 In this way, we're getting rid of the bitterness as well as the excess moisture.
01:33 Because we want to fry the Karela nice and crisp.
01:37 I've taken 1 kg of Bitter Gourd here.
01:41 So the prep is all done.
01:43 Now let's start cooking.
01:45 So heat a pan.
01:46 Next, add in 3 tbsp of Oil.
01:50 Add in only 1/4 tsp of Mustard Seeds.
01:54 Not much.
01:55 1/4 tsp of Cumin Seeds.
01:57 1/4 tsp of Hing or Asafoetida.
02:00 1/4 cup of Cashew Nut pieces.
02:03 Fry the Cashews till they start changing colour.
02:07 Once they tan, add in 2 tbsp of Sesame Seeds.
02:14 And quickly add in the sliced Karela.
02:17 Toss it together.
02:19 And now on very low heat.
02:22 Keep stirring periodically.
02:24 And let the Karela fry.
02:26 This takes about 20-25 minutes to cook.
02:30 And now it's time to add in all the spices.
02:33 A pinch of Turmeric Powder.
02:35 A tsp of Coriander and Cumin Seed Powder.
02:39 1/2 tsp of Red Chilli Powder.
02:41 1/4 tsp Garam Masala Powder.
02:45 Some Salt.
02:47 2 tbsp of Powdered Sugar.
02:50 Mix all the ingredients properly.
02:53 Cook this with the spices for 2 minutes.
02:56 Add in some Coriander Leaves.
03:02 Give it a final toss.
03:04 This is ready, let's turn off the flame.
03:07 This is usually a part of a Gujarati Thali.
03:12 Do serve it with some Kadhi, Puri, Dal, Kachumber and even some Rice.
