Ingredients

Oil (for frying)
Brinjal - 500gms (Slit)
Sev - 3tbsp
Peanuts 3tbsp
Cashew Nuts 3tbsp
Sesame Seeds - 2tbsp
Fennel Seeds - 1 tbsp
Oil - 3 tbsp
Cinnamon Stick - ½-inch
Black Pepper Corns - 3
Cumin Seeds - 1tsp
Tomatoes (chopped) - 3
Kashmiri Red Chilli Powder - 1tbsp
Roasted Cumin Seeds Powder - 1tsp
Coriander Seeds Powder - 1tsp
Turmeric Powder - ½ tsp
Garam Masala Powder - 1tsp
Ginger - Garlic Paste - 1tsp
Salt (as per taste)
Water - 1cup
Green Peas (boiled) - ¼ cup
Coriander Leaves (chopped) - ¼ cup

01:21 Along with that, we will add 1 tbsp of fennel seeds.
01:25 We will grind all the ingredients very finely.
01:28 Masala for sabzi is ready.

01:36 In a wok, we will take 3 tbsp of oil in which we had fried brinjal.
01:41 We will add 1 small piece of cinnamon.

01:45 We will add 1 tsp of cumin seeds.

01:53 We will cook tomatoes till they are soft.
01:56 Tomatoes are cooked well, now we will add spices to it.
02:02 1 tbsp of Kashmiri red chilli powder.
02:05 We will add roasted cumin powder.
02:07 1 tsp of coriander powder.
02:11 1/2 tsp of turmeric.
02:13 Now, we will add 1 tsp of garam masala.
02:15 We will add 1 tsp of ginger garlic paste.
02:18 We will add salt as per taste.
02:21 We will roast the spices very well.
02:23 Now, we will add the ground powder that we had kept.
02:33 We will mix the spices very well with tomatoes.
02:38 We will roast the spices for some time.
02:42 Now, we will add 1 cup of water to it.
02:49 We will mix the spices very well with water.
02:52 We will let it boil.
02:56 Now, we will add 1/4 cup of boiled peas.
03:01 We will add 1/4 cup of coriander.
03:04 We will mix everything very well.
03:07 Gravy is ready, now we will add fried brinjal to it.

03:19 We will add some water to it.
03:27 Now, we will cover it and let it cook for 3 to 4 minutes on low flame.
