Learn how to make Kulith Ki Raab Recipe at home with our Chef Bhumika

Raab is a very healthy and warm recipe which is specially prepared during winter. This winter recipe helps to increase the immune system and provide nutrients required during the winter season.


Ingredients:
200 gms Horse Gram (ground)
1 cup Water
½ cup Water
1 tbsp Ghee
1 tsp Mustard Seeds
A pinch of Asafoetida
1 tsp Cumin Seeds
1½ tsp Ginger-Garlic-Chilli Paste
1 cup Water
Salt (as per taste)
Black Pepper Powder (as per taste)
½ cup Water
1 tsp Sugar
Salt (as per taste)
½ Lemon
Ghee (for garnish)
Coriander Leaves (for garnish)

00:00 The winter season calls for something heartwarming and comforting.
00:04 Today we are going to make one such recipe, Kulit Ki Raag.
00:07 Let's see how it's done.
00:08 This recipe is super simple.
00:11 Today I've used horse gram that has been ground in the mixer grinder.
00:15 As you can see, it is not completely in a flour form.
00:19 It has some flakes as well.
00:21 To this now, I'm going to add in water, 1 cup of water.
00:26 I'm going to mix this properly to make sure there are no lumps left.
00:30 You can see some lumps here.
00:33 I'm going to get rid of this by using a whisk.
00:35 Now that the batter is lump free, I'm going to add in half a cup of water.
00:44 So it's total 1 and a half cup of water to 200 grams of kulit.
00:49 The batter is ready.
00:55 Now let's start preparing our tadka.
00:57 I'm going to add 1 tbsp of ghee to a hot kadhai.
01:02 I'm going to add in 1 tsp of mustard seeds along with a pinch of asafoetida.
01:07 When the mustard starts popping, I'm going to turn down the flame and add in jeera.
01:12 One and a half tsp of ginger garlic and chilli paste.
01:17 I've made this paste using green garlic which is in season right now.
01:22 The taste of green garlic is extremely mild and really tasty.
01:26 Once this is aromatic, I'm going to add in 1 cup of water.
01:32 And now to this, we're going to add in our kulit mixture.
01:38 Mix this really well.
01:39 You can add more or less water depending on the consistency that you want at the end.
01:45 We're going to start with this and then we'll adjust as required.
01:50 Now we're going to season this with some salt.
01:53 I'm going to add in pepper powder.
01:56 The pepper is going to bring in a nice kick,
01:59 especially if you're coming down with a cold or a cough.
02:02 This is going to warm you through completely.
02:05 Traditionally, rab is either made with bajra or whole wheat flour
02:10 but I'd like to keep things very unique in the kitchen.
02:13 That's why I'm trying out this kulit ki rab.
02:16 You can change up the flours as per your requirement.
02:19 This really warms you through and especially when you're recovering from a sickness
02:24 and don't feel like eating anything, this can be your meal replacer.
02:28 Keep stirring the mixture.
02:31 You will notice that it keeps becoming thicker and thicker.
02:33 When you start reaching a consistency where lumps are forming at the bottom,
02:38 you can start adding a little more water.
02:40 I'm adding half a cup water.
02:43 And now I will continue cooking this while stirring.
02:49 When it's ready, switch off the flame.
02:51 Taste it and you can adjust the seasoning accordingly.
02:55 I'm adding in one teaspoon of sugar.
02:57 You can also use jaggery if you want.
03:00 I'm also adding in a little pinch of salt because I feel like the salt is a little less.
03:05 To make it a little more acidic, I'm adding in half a lemon.
03:10 Freshly squeezed is always better.
03:12 One last mix and our kulit ki rab is ready to serve.
03:17 This is super high in calcium and it is protein rich as well.
03:21 Makes for a great meal, especially during winters.
